8 oz Cheddar
md, grated
3/4 c Dairy sour cream
3 ea Egg yolks, lg, beaten
2 ts Unbleached flour :
plus
1 t Unbleached flour
3/4 ts Salt
1 1/2 ts Thyme
1/2 ts Mustard -- dry
2 ts Butter
Set out a heavy skillet. Put the grated Cheddar Cheese in a bowl and add the sour cream and egg yolks, mixing well after each addition. Add the flour salt thyme and dry mustard, which have been mixed well in a separate bowl or cup. Melt the butter in the skillet over low heat and drop the batter by tsp into the skillet. Cook over medium heat until lightly browned on the bottom. Loosen the edges with a spatula, turn and lightly brown the other side. Serve at once with bacon or pork sausage. Makes about 2 dozen 3-inch cakes.

Corn Cheese Pancakes Recipe:
1/2 cup cornbread mix
1/4 cup milk
2 tablespoons melted butter
1 egg
1/2 cup summer corn
1-2 slices crumbled bacon, cooked
2 tablespoons green onions, sliced
handful shredded mozzarella
salt and pepper to taste
In a bowl, combine the cornbread mix, milk, butter, and egg. Give it a light mix and then stir in the corn, bacon, green onions, shredded cheese ( you can use any of your fav - cheddar is delicious too), salt and pepper to taste. Mix well and set aside.
In a large skillet, add some butter or olive oil and let it melt. Scoop 1/4 cup of the batter and cook it on med. low heat for 2-3 minutes until i'ts golden brown. Flip and repeat until you're done with all the batter!

Syrniki (Russian cheese pancakes) are my favorite pancakes. These pancakes are light, soft, high protein and they don’t contain much flour. Syrniki usually served with sour cream and fruit jam and they are perfect for breakfast.

Makes 9-10 pancakes
Ingredients:
700g Farmers Cheese (tvorog cheese), drained
1 Egg + 1 egg yolk
1/4 cup (50g) Sugar
1/4 teaspoon Salt
1 teaspoon Vanilla extract
1/3 cup (42g) All-purpose flour
1/4 cup Raisins (optional)
2 tablespoons Butter
2 tablespoons oil
Sour cream for serving
Jam for serving
Directions:
1. Using a fine mesh sieve or a cheesecloth, squeeze as mush liquids as possible out the cheese. Transfer to a large bowl.
2. Add eggs, sugar, salt, vanilla extract and mix until combined and smooth.
3. Add flour and raisins and stir and combined (do not over mix).
4. Scoop out a portion of the batter, coat with flour and shape into 3/4-inch (1.5cm) thick patty. Coat the outside in flour as needed to prevent sticking.
5. Heat a large pan/skillet over medium heat, add butter/oil.
6. Fry syrniki over medium heat for 3-4 minutes per side, or until golden brown.
7. Serve with sour cream and jelly/jam.

Cheese potato pancakes!
This is a really easy recipe using ingredients you likely have at home already! The mozzarella can be easily substituted for your favorite cheese - cheddar is a great option.
— I recommend using a scale to measure the ingredients for best results
1 russet potato (400g)
1 tbsp sugar (9g)
1/4 cup cornstarch (34g)
Mozzarella cheese (10g each)
Salt for boiling the water
Plenty of oil for high heat cooking
Peel and dice your potato into small, even cubes. Boil in heavily salted water for about 12 minutes until soft and easily pierced with a fork. Drain the water when done and let it sit back in the pot for about 30 seconds to remove excess water. Add salt to potatoes if your water was not salted enough.
Add the cornstarch and sugar, then mash and mix well until combined. Separate into 5 pieces (80g each), roll into a ball, flatten it, add your cheese, then repeat the process.
Pan fry on medium high heat with enough oil to cover the pan entirely. It should cook for 4 to 5 minutes on each side until golden brown.
Serve with your favorite sauce & enjoy!
