How To make Cheddar Pancakes
8 oz Cheddar
md, grated
3/4 c Dairy sour cream
3 ea Egg yolks, lg, beaten
2 ts Unbleached flour :
plus
1 t Unbleached flour
3/4 ts Salt
1 1/2 ts Thyme
1/2 ts Mustard -- dry
2 ts Butter
Set out a heavy skillet. Put the grated Cheddar Cheese in a bowl and add the sour cream and egg yolks, mixing well after each addition. Add the flour salt thyme and dry mustard, which have been mixed well in a separate bowl or cup. Melt the butter in the skillet over low heat and drop the batter by tsp into the skillet. Cook over medium heat until lightly browned on the bottom. Loosen the edges with a spatula, turn and lightly brown the other side. Serve at once with bacon or pork sausage. Makes about 2 dozen 3-inch cakes.

A childhood favorite of mine! These easy lemon syrniki or cheese pancakes are so delicious with a cup of coffee or tea in the morning. Syrniki are Ukrainian breakfast cheese pancakes made with tvorog, also known as farmer’s cheese or quark. The pancakes are delicate, creamy and cheesy. I love to serve them with a spoonful of blueberry or apricot preserves. Growing up, my grandmother used to make these all the time for us! I even included this iconic Ukrainian recipe in my cookbook, Beyond Borscht.

Cottage Cheese Pancakes Recipe - Farmers Cheese Pancakes in 5 Minutes
Ingredients:
2 cups (1 lb) or 500 grams cottage/farmers cheese (Look here how to make farmers cheese - )
2 eggs
5 Tbsp sugar
1 tsp vanilla extract (optional)
5 Tbsp flour + 1/4 cup flour to dredge cheese pancake

Instructions:
1. In a medium bowl, place 2 cups farmers (cottage) cheese, add 2 eggs. 5 tablespoons sugar and 1 teaspoon vanilla extract. and stir until combined.
2. Add 5 tablespoons of flour and stir.
3. Heat 2 tablespoons of oil in a non-stick skillet over medium-low heat. (Make sure the oil is hot enough before adding the cheese pancakes, otherwise they will absorb the oil and become very greasy.)
4. Place 1/4 cup flour in a shallow bowl. Dredge each cheese pancake in flour and place them on a cutting board or in a frying pan.
5. Saute cheese pancakes until golden about 2 minutes per side.
5. Serve them warm with sour cream, jam or fruit. Enjoy! ????

Cheese Potato Pancakes Recipe | Korean Street Food
Cheese potato pancakes!
This is a really easy recipe using ingredients you likely have at home already! The mozzarella can be easily substituted for your favorite cheese - cheddar is a great option.
— I recommend using a scale to measure the ingredients for best results
1 russet potato (400g)
1 tbsp sugar (9g)
1/4 cup cornstarch (34g)
Mozzarella cheese (10g each)
Salt for boiling the water
Plenty of oil for high heat cooking
Peel and dice your potato into small, even cubes. Boil in heavily salted water for about 12 minutes until soft and easily pierced with a fork. Drain the water when done and let it sit back in the pot for about 30 seconds to remove excess water. Add salt to potatoes if your water was not salted enough.
Add the cornstarch and sugar, then mash and mix well until combined. Separate into 5 pieces (80g each), roll into a ball, flatten it, add your cheese, then repeat the process.
Pan fry on medium high heat with enough oil to cover the pan entirely. It should cook for 4 to 5 minutes on each side until golden brown.
Serve with your favorite sauce & enjoy!
