How To make Chargrilled Spiced Chicken W Couscous with Pine Nuts
CHARGRILLED SPICED CHICKEN :
4 boneless skinless chicken breasts
10 ml paprika
salt and freshly ground black pepper 6 tbsp olive oil
1 clove garlic peeled and crushed
1 tbsp lemon juice
fresh coriander sprigs :
to garnish COUSCOUS :
500 ml chicken or vegetable stock
275 g couscous
4 tbsp freshly chopped coriander
50 g toasted pine nut kernels
75 g chopped dried apricots
1. Split each chicken breast almost in half horizontally, open out like a book and place between sheets of clingfilm. Beat with a rolling pin to flatten the chicken. Remove clingfilm, sprinkle with paprika, salt and pepper, then drizzle over 2 tbsp olive oil.
2. Heat a griddle pan or grill until hot then cook the chicken breasts for 8-10 minutes, turning once (you might have to do this in batches if your griddle or grill pan isn

Sicily, at the toe of Italy has a complex history and one that is easily discovered through the food of this vibrant city. Here you can eat Sardines stuffed with Arabian nuts and fruits in a backstreet bar or go into the mountains, to a village inhabited by Albanians who moved here hundreds of years ago and try the best Canoloni in the world. And in the markets you could imagine that you were in a Moroccan Souk if it wasn’t for the Norman Churches and the irrepressible Italian style.
Ainsley discovers that this stunningly beautiful, ancient city still struggles with its history and organized crime. Ainsley meets the mafia fighting Mayor of Palermo, Leoluca Orlando and has a bizarre chat about the mayor’s love of Sicilian food in a market street once controlled by the mafia. Luckily, they were surrounded by armed guards throughout the interview!
The markets and backstreets of Palermo are a treasure trove of street food. Ainsley tries the Fritto Misto (fried fish and vegetables in a light batter) and golden balls of Arancini stuffed with smoked ham and mozzarella.
But there are horrors too. Spleen sandwich and some mysterious ‘meat’ sold from a covered basket that no one is allowed to look in. Ainsley wishes he hadn’t!
Ainsley cooks as the locals do, with ingredients that were in season. Fresh Tuna with artichokes and broad beans, Pasta with seafood, Sarde a Beccafico and a very local Pistachio Pesto sauce.

Have a meat-free Monday with Dean Edward's delicious Greek roasted peppers, stuffed with couscous, quinoa or bulgar wheat.
Roasted Beetroot Salad with Feta Cheese and Walnuts
A healthy beetroot salad with a sweet and salty flavour. The dressing is made with honey and vinegar complimenting with the saltiness of the feta cheese. Beetroots are first peeled then roasted so you can that nice caramelisation on the outside. I find this better than peeling after. It is advisable to wear gloves when handling beetroots, as the juice will stain your hands, and that can last most of the day. For me personally that doesn’t bother me.
I used my home-grown beetroots, which were so easy to grow from seeds, no chemicals, no sprays, all one hundred percent organic goodness. I don’t have a large vege garden, but do enjoy growing a few veges for the fun of it. I find it so rewarding, and exciting to see what one seed can bring you. I do encourage everyone to try it. Even in pots, if you live in an apartment.
This is a very healthy salad, it’s delicious, and can be consumed as a complete meal. Enjoy my roasted beetroot salad with rocket, cheese and walnuts.
