Cavatelli Casserole - Instant Pot dinner in under 10 minutes!
Once again we're stepping into Rose's kitchen. Today for dinner we're having cavatelli casserole, a pasta dish made with sausage, peppers, onions, garlic, and tomato sauce. We had this prepped and made in under 10 minutes using our Instant Pot. Let us know how your cavatelli casserole turns out.
Rose admits this dish was inspired by a similar one from the Pizza Hut menu over 20 years ago! She thought it was so good, she went looking for the recipe. Unable to find the exact recipe, she came up with her own and this delicious crowd favorite was born.
Cavatelli Casserole -
3-4 kinds of pasta (about 2- 2 1/2 c. total)
1 lb. sweet sausage
1 lb. hot sausage
pepperoni cut in half to desired amount
2 green peppers, chopped
1 large onion, chopped
6 mushrooms, sliced (optional)
3 c. spaghetti sauce + 1 c. water if using IP
1/2 c. shredded mozzarella cheese
Stove top directions:
Cook pasta in boiling water, uncovered, until al dente. Drain well.
Crumble and cook meats together with small amount of water in skillet until no longer pink. If the meat starts to crisp add water. Toss in prepared peppers and onions and cook until just softened.
In pot, combine pasta, meats including pepperoni, cooked vegetables, mushrooms, and sauce. Transfer to 9x13 inch baking dish. Top with cheese.
Bake immediately in preheated 350oF oven for 15-20 minutes. Or refrigerate and bake when ready to use. Bake cold pasta 45-50 minutes or until bubbly.
Instant Pot directions:
Saute sausages with 1/2 c. water until no longer pink, continue to crumble into small pieces. Press cancel. Add prepped onions and peppers and stir until combined with cooked meats. Add in dry pasta and sauce with additional 1 cup water. Stir making sure pasta is evenly distributed and ‘covered’. Top with pepperoni and mushrooms (if using).
Put lid on IP and seal. Choose High pressure for 6 minutes.
After IP beeps, allow to (NR) Naturally Release for 2 minutes then (QR) Quick Release (may take up to 5 minutes more). Stir casserole well and top with cheese.

Cavatelli with Broccoli

Donna recreates a dish from Aunt Josie’s Restaurant in Syracuse NY.
Ingredients:
1 pound Cavatelli
3-4 tablespoons olive oil
3-5 cloves garlic, minced
1 pound broccoli florets
1 ½ cups chicken stock
⅛ teaspoon red pepper flakes
2 tablespoons butter
1 cup Parmesan cheese, grated
Salt and Pepper to taste
Directions:
In a large saute pan, heat the olive oil. Add the minced garlic and cook for 1 minute. Add the broccoli and cook for 5 minutes.
While the broccoli cooks, in another stock pot, boil 3-4 quarts of water. Add 2 tablespoons of salt. Add the cavatelli and cook for approximately 8 minutes or until the pasta is barely done. Drain the pasta. You want it less than al dente.
Add the chicken stock to the broccoli and continue to cook until the broccoli is tender.
Add the drained cavatelli. Add the butter and cook for an additional 5 minutes or until the pasta is done, adding pasta water to the sauce if needed. Season with salt and pepper to taste. Stir in ¾ of the Parmesan cheese, saving the rest for the table. Serve immediately.
