Cauliflower Shepherd’s Pie
INGREDIENTS
2 tbsp Olive Oil
1 ½ lbs ground beef
2 tsp salt
1 tsp pepper
1 cup yellow onion
1 cup sweet potato
½ cup celery
½ cup carrots2
cloves garlic
2 tsp jalapeno
2 tbsp chili powder
½ tsp cinnamon
1 pinch Cayenne
½ cup red pepper
15 oz diced tomatoes
1 cup beef stock1
1/2 heads white cauliflower
2 tbsp spinach puree
2 tbsp pumpkin puree
PREPARATION
Sprinkle pan with an oil. Add ground beef and cook until brown. Add salt and pepper.Add yellow onion sweet potato, celery, carrots and garlic.Add jalapeno, chili powder, cinnamon, cayenne, mix it.Add red pepper, diced tomatoes, beef stock and stew for 10-15 min. Transfer meat mixture in a baking dish.Steam white cauliflower for 5 min.
Make 3 cauliflower puree.1) Blend cauliflower with spinach puree.
2) Blend cauliflower with pumpkin puree.
3) Blend white cauliflower.
Fill a piping bag with it and decorate meat mixture.Bake at 200C/400F for 20-30 min.

2 Cups Cauliflower (approx)
1 Tbsp Butter
1 Tbsp Chopped Garlic
1/2 Tbsp All Purpose Flour (Maida)
1/2 Cup Milk
1 Cheese Slice
1/4 Tsp Crushed Black Pepper
1/4 Tsp Chilli Flakes
1/4 Cup to 1/2 Cup Mozzarella Cheese
Extra Virgin Olive Oil (Optional)
Salt as per Taste
[BAKING INSTRUCTIONS]
???? Kadhai/Cooker(No whistle & gasket): Preheat at medium flame for 10 min. Bake at medium flame for 5-7 min.
???? OTG/Convection: Preheat at 180°C for 10 min. Then bake for 5-7 min.

Ingredients:
1 large head of Cauliflower, cut into small florets
4 tablespoons (60g) Butter
2 cloves Garlic, crushed
6 tablespoons (45g) flour
2 cups (480ml) Milk
1 cup (110g) Cheddar cheese, grated plus extra for topping
1 teaspoon Salt
1/2 teaspoon Pepper
1 teaspoon Dijon mustard
1 teaspoon Paprika
1/2 cup (40g) Parmesan cheese, grated
Directions:
1. To a large pot of boiling water add 1 tablespoon of salt. Add cauliflower florets and cook for 5 minutes. Drain and set aside.
2. Preheat oven to 400F (200C).
3. In a saucepan melt butter over medium heat, add crushed garlic and sauté for 1-2 minutes. Add flour, cook, stirring constantly for 1 minute. While constantly whisking, gradually pour in the milk. Keep cooking and whisking over medium-low heat until the sauce is thickened.
4. Remove from heat and add salt, pepper, paprika, Dijon mustard and cheddar cheese. Stir until melted and combined.
5. Spread cauliflower florets over the bottom of a baking dish. Pour the sauce over the cauliflower and stir until combined. Sprinkle some grated cheddar and parmesan cheese on top.
6. Bake for 25-30 minutes, until golden and bubbly.
7. Serve!
