How To make Casserole De Santa Fe
3 1/2 c AM Blue Cornmeal
1 ts Non-alum baking powder
2 ts Cumin
2 ts Chili powder
2 c Milk or water
1 Egg; beaten or egg replacer
1 c Chopped green chilis
1 tb AM Unrefined Vegetable Oil
1 md Onion; chopped
2 c Pinto beans
(cooked with clove of :
garlic and drained) 1 c Tomato sauce
2 1/2 c Grated cheese
Chopped green onions -- to garnish top Combine first three ingredients. Combine milk, egg and chilies in a separate bowl. Saute' chopped onion in oil and add to milk mixture; stir into cornmeal mixture, then pour half of batter into the bottom of an oiled casserole dish (rectangular). Layer with beans, tomato sauce, and cheese; repeat layering. Bake at 375 F. for 40 minutes, garnish with chopped green onions and serve with salsa. JUST A NOTE - I really shredded the chicken for this recipe, but I think the next time I make this, I'll just do chopped chicken in bigger chunks. It was good, but for me, I just prefer shredded in more soup or chili-style recipes. For this one, I would have rather had the chicken in pieces, not shredded. :)

Cheddars Santa Fe Spinach Dip
This creamy spinach dip is easy to prepare. This dip is a copycat recipe of the spinach dip served at Cheddar's Scratch Kitchen. It has several different types of cheese. You can put this recipe together in no time.

Ingredients
10 ounces frozen spinach, thawed and drained
1//2 cup finely diced white onion
1 (8-ounce) package of cream cheese
1/2 cup shredded white Cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded mozzarella cheese
2 teaspoons minced garlic
2 teaspoons finely minced jalapeno pepper
1/2 teaspoon seasoned salt
1/2 cup sour cream
1/2 cup salsa
corn tortilla chips
Instructions
Preheat the oven to 350 degrees. In a medium bowl, combine the spinach, onions, cream cheese, Cheddar cheese, Monterey Jack cheese, mozzarella cheese, garlic, jalapeno pepper, and seasoned salt. Stir until well blended. Spread into a 1-quart casserole dish and bake for approximately 30 minutes or until the top is nice and bubbly. Serve with sour cream, salsa, and warmed tortilla chips.
