How To make Carrot Cake2
3 c Flour
2 c Sugar
1 t Salt
1 t Soda
1 t Cinnamon
3 Beaten eggs
1 1/2 c Vegetable oil
2 c Grated carrots
1 sm Cn crushed pineapple
2 ts Vanilla
1 1/2 c Chopped pecans
Glaze: 2 c Sugar
1 c Milk
1 t Butter
1 t Vanilla
Into a large mixing bowl sift dry ingredients. Add eggs, oil, carrots, & pineapple. Mix well. Add vanilla & pecans. Bake in tube pan or 6 1/2x 10 1/2-inch oblong cake pan for one hr. at 350 degrees. Glaze with the
following, if desired. Glaze: Combine sugar & milk in saucepan. Bring to a boil & cook over low heat until mixture forms a soft ball in water. Cool. Add butter & vanilla; beat until creamy. Pour over cake. ~-

Small Batch Carrot Cake for Two - the perfect amount of carrot cake!
This 6 inch small batch carrot cake for two is moist, tender and topped with cream cheese frosting. It is the perfect amount for 2-4 people.

Carrot Cake
1/2 cup all purpose flour
▢1/2 tsp nutmeg
▢1 tsp cinnamon
▢1/2 tsp baking soda
▢1/4 tsp salt
▢1/4 cup sugar
▢1/4 cup brown sugar
▢1/4 cup canola oil or melted butter
▢1 egg
▢1/2 tsp vanilla
▢2/3 cup carrot grated
▢1/4 cup walnuts finely chopped optional
Cream Cheese Frosting
▢2 oz. cream cheese softened
▢3 Tbsp butter softened
▢1/2 tsp vanilla
▢1 cup powdered sugar
▢1 tsp whipping cream or milk
▢1/4 cup walnuts chopped for garnish on top
Directions:
Grease and flour 6 inch cake pan. Line bottom with wax paper or parchment paper.
Preheat oven to 350 degrees F.
In a small bowl combine flour, nutmeg, cinnamon, baking soda and salt.
In another bowl mix together sugars, oil, vanilla and egg. Add in flour mixture and stir to combine.
Fold in grated carrots.
Pour batter into prepared pan.
Bake for 30-35 minutes or until a toothpick comes out clean.
Allow cake to cool in pan on a cooling rack. Remove and frost.
Cream Cheese Frosting
Cream together cream cheese and butter until smooth.
Add in whipping cream, sugar and vanilla and mix until combined and fluffy.
Frost top of cake or the entire cake.
Sprinkle with chopped walnuts

Soft & moist CARROT CAKE with whole wheat flour| English| Wandering Eyes

Ingredients:-
Dry:-
Whole wheat flour- 1cup
Carrot grated- 1cup
Salt- 1/2tsp
Baking soda- 1/2tsp
Baking powder- 1tsp
Wet:-
Vegetable oil- 1/2 cup
Eggs- 2nos
Sugar- 3/4cup (180gms)
Vanilla extract- 1tsp
Process:-
Mix (sift) together all the dry ingredients (except carrots) and keep aside.
Whisk all the wet ingredients in a large mixing bowl until sugar melts. Add the dry ingredients mixture in batches. whisk it altogether (dry and wet).
Mix 1-2 cups grated carrots (according to your taste) with 2tbsp of wheat flour.
Now adding the carrots in batches, cut and fold the cake batter until smooth (or5-6mins) with the help of a spatula.
Pour the batter in a greased tin. Dab it for 3 times.
Bake the cake in a preheated oven (at180degrees) for 40-45 mins.

Carrot cake is my WEAKNESS ???? A super moist carrot cake, packed with juicy, plump raisins, topped with a thick and creamy cream cheese icing ???? I love it so much!
It’s super easy to make, similar to my carrot cake loaf cake with a few adjustments ????

All you need is????
For the cake:
2 large eggs, room temp
100g dark brown sugar
75g granulated sugar
50ml buttermilk
175ml vegetable oil
225g plain flour
1/2 tsp baking powder
½ tsp bicarbonate of soda
1/4 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
220g carrots (finely grated)
150g raisins
For the icing:
90g unsalted butter, softened
90g full-fat cream cheese
1 tsp vanilla extract
250g icing sugar, sifted
Tin size: 8x8”
Bake 160C (fan) 25-30 minutes or until a toothpick comes out clean
Make sure you let the cake cool before icing it ????
