How To make Carbonara Sauce

butter

bacon, cut in 1/4 inch strips

eggs
2
each
egg yolks
1
teaspoon
red pepper flakes
1
cup
parmesan cheese
1/2
cup
heavy cream
1
teaspoon
salt
1
black pepper
1
pound
spaghetti
Directions:
Cream soft butter. In another bowl, beat eggs & yolks and whisk until blended, add 1/2 c cheese.
Heat large casserole dish in 200 degree oven. Bring water and salt to boil in large pot. Meanwhile, fry bacon in skillet over medium heat until crisp. Pour off half of fat and stir in red pepper flakes and cream. Bring cream mixture to simmer and keep warm until spaghetti is done.
Transfer cooked spaghetti to heated casserole dish and stir in creamed butter. Coat well. Stir in hot bacon and cream mixture and finally the beaten eggs and cheese. The heat of the pasta will cook the raw eggs. Taste and season with salt and pepper. Serve with remaining grated cheese.

RECIPE
Slice 1/4 onion.
Saute onion with a pinch of salt.
After onion became soft, add vegetable broth and simmer them for 5 minutes with low heat.
Take them off from heat and put them in room temperature for 5 minutes.
Mix well one whole egg and two egg yolk, Fresh cream 40 g, Parmigiano 10 g.
Add pinch of black pepper.
Put onion broth to egg liquid with stirring well.
Drain them with basket.
Mix well until it become thickened in a water bath.
This sauce goes well with chicken or steamed vegetables.
Fluffy carbonara is done after adding crispy bacon and boiled pasta.

Around 1/4 cup pasta water
Fresh cracked black pepper
