How To make Pesto Carbonara
1/2 lb Bacon
- cut in 1/4-inch slices 1/4 c Fresh basil leaves
5 Garlic cloves
1/2 c Half and half
2 Eggs; beaten
1 c Grated Parmesan cheese
--(freshly grated) 1 lb Vermicelli
In a skillet, fry bacon until lightly brown; drain and set aside. Put basil and garlic into a food processor or blender; process or blend until finely minced. In a large bowl, mix the half and half with the eggs; add bacon, basil mixture, and cheese. Cook pasta according to package directions. Drain; immediately add to egg mixture. Cover and let stand for 2 to 3 minutes. Uncover and toss to coat pasta with sauce. Serve immediately. Makes 4 to 6 servings. The smell of the fresh basils in your own made pesto is the best! If you can find or make your own pasta, please do so. But dried pasta is always okay, just make sure not to overcooked them.
For pesto.
2 tbsp pine nuts/cashew nuts
1 cup fresh basils
2 cloves garlic
1/4 - 1/2 cup olive oil
Salt and pepper
For the carbonara.
200 - 250 grams spaghetti or any pasta
1/4 cup pesto or more
3 egg yolks
3/4 cup heavy cream
Parmesan cheese
Salt and pepper
Bacon (optional)

Spaghetti carbonara ???? #shorts 
Carbonara
Ingredients
- 400g Guanciale, diced small
- 300g pecorino cheese, grated
- 1 packet spaghetti
- 1 whole egg
- 3 egg yolks
- Salt for the pasta water
Method
1. Place a large pot of water on to boil with 2 pinches of salt in it.
2. In a large frypan, add the guanciale and place on a med-high heat
3. Add the pasta to the boiling water and cook until al dente
4. Once the guanciale is golden, remove from the heat and drain the fat from it, keeping both the guanciale and fat
5. In a mixing bowl, add all the eggs and the cheese, then add about 1/2 cup of the hot pasta water and mix
6. Once the pasta is cooked, add it to the pan the guanciale was in and then add 3/4 of the cooked guanciale and the cheese and egg mixture
7. Mix well (note you do not want the heat on under this), feel free to add some more of the hot pasta water if you feel it needs
8. Serve and sprinkle some of the leftover crispy guanciale on the top and some fresh black pepper.
9. Enjoy!
