A favourite dessert in our house - simple Pear Tarte Tatin
Some of the best recipes stem from a mistake and this is one of them! It’s more commonly made with apples, but I really love it with pears. It’s also a dessert that my partner (aka babe) requests often. Check out the recipe below, follow along and and make it at home.

Ingredients
- 5 firm pears, peeled and cut and 12 pieces
- One sheet of puff pastry
- 150g sugar
- 50g unsalted butter, diced
- 3 tbsp water
- Vanilla ice cream to serve
Method
1. Cut a piece of puff pastry, 1cm bigger than the size of the cake tin you are going to use.
2. In a heavy-based pot, pour the sugar and shake it so it’s level.
3. Next, pour the water around the outside so it falls down the wall of the pot.
4. Put the pot on medium heat and cook your caramel until it turns a dark, amber colour. Be careful not to mix the melted sugar at all, and only stir it by swirling the pot.
5. Add the peeled and cut pears to the pot and stir so that they are completely covered.
6. Next, add the diced butter to the pot and stir until it’s completely incorporated into the caramel.
7. Arrange your pears neatly in a greased cake tin.
8. Place the disk of puff pastry over the pears and push the edges down the side of the tin.
9. Bake this in a preheated 180°c oven for 30-35 minutes, or until the pastry is completely cooked and golden brown.
10. Remove from the oven and let it rest for a couple of minutes before carefully turning it out onto a plate.
11. Serve with vanilla ice cream.
12. Enjoy!
