How To make Candied Holiday Fruitcake
3 c Chopped pecans
2 c Chopped candied pineapple
3/4 c Chopped candied cherries
1/3 c Chopped candied orange peel
1 3/4 c Plus 3 tb, all-purpose flour
1 c Butter, room temperature
1 c Sugar
5 Eggs
1 tb Vanilla extract
1 tb Lemon extract
1/2 ts Baking powder
1 pn Salt
Powdered sugar Position rack in lowest third of oven and preheat to 250 deg F. Grease and flour 12 cup bundt pan or tube cake pan. In large bowl, mix pecans and fruits with 3 tb flour. In another large bowl, cream butter with sugar until light and fluffy. Beat in eggs 1 at a time. Stir in vanila and lemon extracts. Sift 1 3/4 cups flour with baking powder and salt. Add dry ingredients to batter; stir until blended. Mix fruit mixture into batter. Pout batter into prepared pan. Bake until golden brown and testr inserted into centre comes out clean, about 2 1/2 hours. Cool in pan on rack 15 minutes. Turn out onto rack and cool. (Can be prepare 2 weeks ahead; wrap in foil and store at room temperature.) Dust with powdered sugar. Posted by Linda Davis

Candied fruit or fruit confitis a typical Provencal holiday treat. The city Apt is famous for its candied fruit factory and museum and we go there every year around this time to purchase calissons, another Provencal holiday specialty and candied fruit for this cake.
Ingredients:
300 grams candied fruit, steeped in rhum overnight
125 grams each of flour, sugar and butter
3 eggs
zest and juice from two lemons and two oranges
a half cup of amarena cherries (cherries steeped in alcohol)
1 tsp cinnamon, a pinch of nutmeg
Bake at 150 C for one hour
Decorate with more candied fruit and massepain (almond and sugar paste).

Christmas Fruitcake:
2 cups sugar
6 large eggs at room temperature
1/2 pound butter, softened (do not use oleo)
1 teaspoon pure vanilla extract
3 cups all purpose flour, sifted first and then measured
1/2 teaspoon salt
1 pound candied pineapple
1/2 pound red candied cherries
1/2 pound green candied cherries
1 pound golden raisins
1/2 pound chopped pecans
1/2 pound shredded coconut
juice from one orange

1 cup candied green cherries chopped

1/2 cup butter crisco
3/4 cups sugar
1 egg
1/2 t. vanilla
1/2 t. almond extract
1 1/4 all purpose flour
1 /2 t. baking soda
1/2 t. Salt
350 10 to 12 minutes
