How To make Cajun Chicken Sandwiches
4 chicken breast halves without skin
boneless
Emeril's Bayou Blast (see recipe) :
to taste powdered chipotle peppers to taste 2 tablespoons canola oil :

4 hamburger buns
***GARNISHES*** chipotle pepper puree thick sliced tomatoes dill pickles onion slices lettuce leaves cheese slices -- your choice mustard mayonnaise
* I imagine you can omit the oil & use cast iron skillet to cook the chicken for a "BLACKENED" version.
Season the chicken breast halves. Heat the oil in a skillet. When oil is hot, place the chicken in the skillet & cook turning once or twice until chicken is done. Place chicken on a plate lined with paper towels to drain the oil.
Spread a little chipotle pepper puree on one half of each bun, on the other half spread your choice of mustard or mayonnaise. Place a piece of chicken & any of the other garnishes you desire in the bun & enjoy the Endorphin rush from the spices & chipotle pepper puree.

Today, I’ve decided to spice my chicken up with some vivacious spices and a killer sauce. This Spicy Cajun Chicken Sandwich recipe is so good you’ll be making it again and again.

WHAT HEATH USED IN THE RECIPE:
• Heath Riles BBQ Cajun Creole Garlic Butter
• Goldens' Cast Iron
• Victorinox Fibrox Pro 6-inch Curved Boning Knife
• Malcom's King Craw Seasoning
• Killer Hogs Hot Sauce
• Thermapen One
• Royal Oak Charcoal
• Pure and Simple Canola Oil
• Royal Oak Tumbleweed Fire Starters
INGREDIENTS:
• 3 boneless chicken breasts
• Heath Riles BBQ Cajun Creole Garlic Butter Rub
• Malcom's King Craw Cajun Seasoning
• Killer Hogs Hot Sauce
• Mayonnaise
• Tomatoes
• Lettuce
• Sliced pepeprjack cheese
• Sandwich buns
CAJUN MAYO:
• 1/2 cup of mayonnaise
• 1 teaspoon of Malcom's King Craw Cajun Seasoning
• 1 teaspoon of Heath Riles BBQ Cajun Creole Garlic Butter Rub
• 7-8 dashes of Killer Hogs Hot Sauce (Can add more or less depending on your desired heat level)
DIRECTIONS:
1. Get your Goldens' Cast Iron, or grill of choice, up to temperature of approximately 450-500º.
2. Butterfly your chicken breasts with your knife.
3. Coat your chicken breasts with Killer Hogs Hot Sauce to act as a binder for your seasonings.
4. Season your chicken breasts with Heath Riles BBQ Cajun Creole Garlic Butter and Malcom's King Craw.
5. Flip your chicken and repeat steps 3 and 4.
6. Once you've seasoned your chicken breasts, create your spicy mayo with 1/2 cup of mayo, 7-8 dashes of Killer Hogs Hot Sauce, 1 teaspoon of Heath Riles BBQ Cajun Creole Garlic Butter Rub, and 1 teaspoon of Malcom's King Craw Cajun Seasoning. Place it in the fridge until it's time to spread on your sandwich.
7. Spray your grill grates with canola oil before placing your chicken on the grill.
8. Place your chicken breasts on your grill. Rotate every 1.5 - 2 minutes. Cook for 4 minutes on each side. Total cook time of about 9 minutes.
9. Let your chicken breasts rest for 5-10 minutes.
10. Assemble your sandwich with your buns, tomatoes, lettuce, pepper jack cheese, cajun mayo, and grilled chicken breasts
11. ENJOY

Crispy Cajun Chicken Sandwiches
Crispy chicken is always a recipe for success. Place it between two toasted buns, spread with spicy-mayo relish (as spicy or as tame as you like), top it off with pickles, and serve with crispy potato wedges, and you’ve got quite the winning dinner. As we like to say: Get in my belly!

Ultimate Chicken Sandwiches????
6-8 Chicken Thighs
Equivalent amount of buns and cheese
Lettuce
Tomatoes
Your favorite sauce (yum yum coming soon)
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
1 tsp chili powder
1/2 tsp celery salt
1 tsp smoked paprika
Salt to taste ( I did 1.5 tsp)
Butter milk until chicken is submerged
1 cups starch
1 cup panko
Season to taste ????
Yes you can air fry this if you spray enough with oil!
