Creamy Cajun Chicken Pasta
This one's minus the chilli, perfect for the kids.
Ingredients
250g chicken
1 tablespoon yoghurt
1 teaspoon garlic powder
1 and a half teaspoon Cajun seasoning
1 teaspoon smoked paprika
1 tablespoon olive oil
1 teaspoon salt
Sauce
2 tablespoon olive oil
2 garlic cloves finely chopped
250g passata Italian
1 tablespoon fresh parsley or coriander
1/2 teaspoon salt or to taste
1/2 teaspoon black pepper
1/2 cup double cream
1 cup pasta water
Fresh parsley or coriander to garnish
250g pasta

1 lb boneless skinless chicken breast
1 lb rigatoni noodles
8 oz andouille sausage
1 diced shallot
2 cups fresh spinach
4 tbsps butter
1 tbsp garlic paste
2 tbsps flour
2 cups half and half
1 cup heavy cream
1 cup shredded parmesan cheese
2 cups shredded mozzarella cheese
1/4 cup diced parsley
salt, pepper, garlic, onion powder, cajun seasoning
Directions:
Start by dicing your shallot or onion and cutting the Andouille Sausage into bite sized pieces. Season chicken breast generously with cajun seasoning and all purpose seasoning.
2. Preheat oven to 400 degrees and boil your noodles per package instructions.
3. Sear chicken breast for 60 seconds per side in a hot skillet with a little cooking oil and then place the chicken in the 400 degree oven for about 15 minutes or until the chicken is 165 degrees internal temp.
4. Meanwhile, start on the Alfredo sauce by adding some butter to a skillet and then adding the sausage. Cook until the sausage is well browned and then remove with a slotted spoon. Next, add the shallot and cook for 2 minutes. Add 2 more tbsps of butter, and garlic paste. Next, add in 2tbsps of flour and cook for 2 minutes.
5. Next, add in your heavy cream and half and half. Bring to a boil and then reduce to a simmer. Add in the spinach and stir until it wilts and combines. Turn the heat to low and then begin adding your shredded cheese. Season to taste. Add in your sausage. Chop the chicken and add that to the sauce as well.
6. Mix everything together and then add to a casserole dish, top with mozzarella cheese and bake at 350 for 20 minutes.
7. Garnish with chopped parsley and serve.

Ingredients
▢1 tablespoon oil
▢2 boneless skinless chicken breasts
▢1 teaspoon + ½ teaspoon salt (divided)
▢1 teaspoon brown sugar
▢2 teaspoons Cajun seasoning
▢1 medium onion (finely diced)
▢4 cloves garlic (finely minced)
▢1 teaspoon Italian seasoning
▢2½ cups low sodium chicken broth
▢398 ml diced tomatoes (14 oz)
▢½ cup heavy whipping cream
▢3 cups penne pasta (uncooked – about 300 grams)
Instructions
Heat a large skillet over medium-high heat.
Meanwhile, slice the chicken breasts.
Combine Cajun seasoning, 1 teaspoon salt, and brown sugar. Season chicken well and add to the hot pan. Cook until browned on both sides, about 3 minutes per side.
Remove chicken from pan and keep warm. Add onion (adding more oil if necessary) and saute until softened and starting to brown.
Add garlic, Italian seasoning and remaining ½ teaspoon salt and cook 1 minute.
Add broth, tomatoes and cream and bring to a simmer over medium-high heat.
Add dry pasta and browned chicken and bring to a boil (if your chicken is cooked through, you can also add it at the end). Cover and reduce heat so that the liquid is simmering, about medium-low. Stir often to prevent pasta from sticking.
If pasta is nearly ready but there is still lots of liquid left, simply remove the lid and finish cooking. This will help the sauce to thicken. When the pasta is cooked to desired tenderness, it's ready to serve.
Taste and adjust seasonings to taste, adding more Cajun seasoning if desired.
