Ingredients:
5-1/2 cups bread flour
2 tsp salt
3/4 cup HOT water
1/4 cup honey
1-1/4 cups buttermilk
2 to 4 Tbsp butter
2 bread pans
1/2 cup warm water
2 tsp dry yeast
Add yeast to warm water, mix,
Let stand for 5 minutes
Combine the 3/4 cup hot water, honey and buttermilk . . .
Mix well
Add the salt to the flour and mix in
Make a well in the flour/salt mixture . . .
Pour the yeast mixture and the water/
honey/buttermilk mixture into the well
Begin mixing, working from the inside outward . . .
When the dough begins to come together and is too difficult to stir
with a spoon, it can be mixed in the bowl by hand
If the dough is too stiff to easily work, add a handfull of water. If
the dough is too sticky to knead, add a handfull of four.
Turn the dough out and finish mixing it on the countertop by hand.
›Add flour only as needed to keep dough from sticking to working
surface and hands.
Form the dough into a ball. . .
. . cover it and let it rest for 10 minutes
By machine or by hand, knead for 5 - 6 minutes
For the last 4 - 5 minutes of kneading, manually knead in all of the
butter. This is the step that really makes this bread excellent!
Form the dough into a ball . . .
Oil a large mixing bowl and place the dough ball into it, smooth side up
Cover and set aside to rise for 1-1/2 hours or until the dough doubles
in size
Test the dough after the first rise: Poke a wet finger into the dough.
If the hole does not fill back in, the dough is ready to be deflated
and formed for the second rise.
Gently deflate the dough, form it into a ball again and set it to rise
as before, but for only half as long (45 minutes)
After the second rise, gently deflate the dough and turn it out of the
bowl
Roll the dough into a log shape about 12” long
Cut the log in half
Oil (grease) the two bread pans
Make the ends of each piece smooth
. . .and place each piece in a pan . . .
Cover the loaves and allow them about 30 minutes in a warm, moist
placed to double in size.
Preheat your oven to 325 degrees.
Score your loaves as desired
Optional- Paint your loaf tops with oil or egg and sprinkle chia, flax or cesame seeds on top.
Place your loaves on a center rack of your oven. Bake for 1 hour.
Place a pan of water on the bottom rack of your oven, for steam while
baking. (This will give you a great crust!)
Here are your beautiful loaves!
Wait at least 20 minutes before cutting into them . . .
Bon Appetit!!
