How To make Buttermilk Fried Chicken
3/4 c Buttermilk
1 t Salt
1/4 ts Pepper
2 1/2 lb Chicken fryer or broiler
1 c Flour
1 1/2 c Vegetable oil
Combine buttermilk, salt and pepper; stir well. Skin cut up chicken, if desired. Place chicken in a shallow container and pour mixture over top. Cover and let stand 20 minutes, turning once. Remove chicken. Discard buttermilk. Dredge chicken in flour, coating well. Cook in hot oil (350F.) until browned, turning to brown both sides. Reduce heat to 275F. Cover and cook 25 minutes. Uncover and cook an additional 5 minutes. Drain on paper towels.

We used fresh drumsticks and double dredged them in our flour and cornstarch mixture, that is what helps make our chicken extra crispy. We seasoned our buttermilk with paprika, pepper, garlic powder and onion powder and soaked them overnight.
our flour mixture contains 12 herbs and spices.
dried basil, dried oregano, dried marjoram, dried parsley, salt, white pepper, celery salt, paprika, cayenne pepper, ground thyme, garlic powder and onion powder.
We fried the chicken at 350 degrees for 8 minutes and transferred to a 350 degree oven and cooked until the internal temperature of the chicken was 165 degrees.
