For those of us who are not morning people, the breakfast casserole is somewhat of a godsend. It gives you a make-ahead option that feeds a crowd and the only morning task you have to complete is popping a baking dish in the oven. That’s something you might be able to handle even before your first cup of coffee! I love this particular breakfast bake because it brings you one of the morning greats in crowd-pleasing casserole form – the ever-lovable breakfast burrito. There’s no rolling or individual portions to worry about – just bake, slice, and serve up this meaty tortilla, green chile, egg, and chorizo bake!

1 lb 80/20 ground beef
1 lb 97/7 ground beef
2 jalapenos
1 diced onion
1/2 tsp beef bouillon
1/2 cup water
All-Purpose Seasoning
1 tsp each (sazon, chile powder, cumin, smoked paprika, italian seasoning)
16 oz refried beans
2 cups colby jack cheese
2 cups sour cream
zest and juice of 1 lime
1/2 tsp sugar
1 cup crushed doritos
1/4 cup sliced black olives
1/4 cup diced cilantro
1/2 cup diced tomatoes

You will need:
500 grams of minced beef (1 lbs)
1 onion
Salt, pepper and oil
140 grams of tomato paste (5 oz)
1 package of taco seasoning
240 grams of kidney beans (drained weight) (8.4 oz)
285 grams of corn (drained weight) (10 oz)
200-250 ml of water (about 1 cup)
9 tortillas
500 ml of mornay sauce (2 cups)
250 ml of sour cream (1 cup)
200 grams of cheddar cheese in total (7 oz)
160 degrees C convection or 320 degrees F convection

bake time: 15 to 20 minutes
The recipe will fill one dozen burritos
Ingredients
Oil
12 flour tortillas
Filling
2 shredded chicken breast
1 cup cooked potatoes
1/2 chopped white onion
3 garlic cloves
1 1/2 cups mix veggies
1 Tbs butter
1/2 Tbs ground cumin
1/2 Tbs chicken bouillon
1 Tsp Black pepper
Creamy Sauce
1 Tbs butter
3 cups shredded medium cheddar cheese
2 cups heavy whipping cream
1 cup warm water
1 can hatch chiles
1/2 Tbs chicken bouillon
*can of cream of chicken also taste great in this combo
Topping
1 cup mozzarella cheese
1/2 cup Mexican cheese blend
One dozen flour tortillas in 30 minutes-
1 dozen tortillas made by hand
5 dozen flour tortillas made by hand from scratch
Spinach Tortillas made by hand

INGREDIENTS
1 lb (454 g) lean ground beef
1/2 small onion diced
2 cloves of garlic minced
1 tsp chili powder
1/2 tsp season all salt (or regular salt)
1/2 tsp black pepper
1/4 tsp ground cumin
4 oz (113 g) can of green chiles (drained)
15 oz (425 g) can of pinto beans (rinsed and drained)
16 oz (454 g) container of sour cream
1 oz (28 g) package onion soup mix seasoning
8 oz (227 g) block of cheddar cheese shredded
4 oz (113 g) shredded Mozzarella cheese
16 oz (454 g) jar of your favorite store bought salsa
8 to 9 flour tortillas (use enough to cover the dish surface area for two layers)
9 x 13 baking dish
INSTRUCTIONS
- In a large preheated skillet combine and cook ground beef, onions garlic, chili powder, seasoning salt, black pepper, ground cumin until ground beef is cooked through
- Next add green chilis, pinto beans with ground beef combine and sauté for a minute or so and remove from heat
- In a bowl combine sour cream, onion soup mix, mozzarella cheese and combine well, then set aside
- In a 9 x 13 baking dish add 1/2 cup of salsa and spread on the bottom of dish
- Next add a layer of flour tortillas, then spread half of the ground beef mixture evenly, next the entire bowl of sour cream mixture, top with shredded cheddar cheese, then another layer of flour tortillas
- Add the rest of the ground beef mixture and spread evenly, then more cheddar cheese, pour the jar of salsa and spread evenly over cheese, then top off with the rest of the cheddar cheese and cover with aluminum foil
- Bake in a preheated oven @ 350 degrees F / 176 degrees C for 25 minutes covered
- Then remove foil and bake and additional 15 minutes uncovered
- Remove from oven and allow to set for 20 minutes then serve
- This recipe serves 8 to 10 people
