Hey guys! It's been a little bit of time since I did a nice homey kind of breakfast so I figured yup we need to do it now lol. So here we are some Breakfast Enchiladas! Not just plain breakfast enchiladas though we are going to cover these bad boys with an AWESOME sausage gravy. Yup the type you would make for biscuits and gravy. This is an easy breakfast I know you will all fall in love with. When you do try it make sure to take a pic and post it to my Facebook page!
Total Time: 1 Hour
Makes: 6 to 10 Servings
1 lb. Ground Breakfast Sausage
1/2 Cup Onion, Diced
1 Jalapeño, Seeded and Diced
1/3 Cup Flour
2-3/4 Cups Milk
10 Eggs
2 Tbsp. Butter
2 Cups Tater Tots, Cooked
1 Cup Pepper Jack Cheese, Shredded
1 Cup Cheddar Cheese, Shredded
10 FlourTortillas
Salt
Pepper

Overnight Breakfast Enchiladas ~ Tortillas stuffed with Sausage, Eggs,Cheese and Bacon! This is the Perfect Overnight Breakfast Casserole Recipe!

Skyline Chili Breakfast Enchiladas Recipe
Our new Skyline Chili Breakfast Enchiladas recipe is the perfect recipe for your holiday brunch this season. Enjoy!
Ingredients:
o 15 oz of Skyline Chili
o 1/2 Cup chopped white onion
o 2 1/2 Cups Skyline shredded cheddar cheese
o 1 can red beans, rinsed and drained
o 8 (8 inch) flour tortillas
o 1 1/4 Cup half-and-half
o 4 large eggs
o 1/2 Teaspoon salt
o 1 Tablespoon flour
o Skyline Hot Sauce, sour cream, salsa are optional for serving
Recipe:
If baking the same day, preheat the oven to 350 degrees
Coat a 9x13 inch baking dish with nonstick cooking spray.
Mix together the chili, beans, onions, and 2 Cups of the cheese in a medium bowl.
Scoop 1/3 Cup of the chili mixture onto each tortilla. Roll up tortilla and place seam side down in the baking dish.
Whisk together the half-and-half, eggs, salt, and flour. Pour egg mixture over tortillas.
If making the day before, cover and refrigerate overnight.
If baking the same day, put into oven.
Bake, covered, for 35 minutes. Remove foil and sprinkle remaining 1/2 Cup of cheese over enchiladas. Bake uncovered for 10 more minutes or until tops are golden brown and the egg mixture is set.
Serve with Skyline hot sauce, sour cream, salsa, or additional onions.
