How To make Brook Trout Sauteed with Mushrooms
6 Whole trout
(about 1/2 lb. each :
when cleaned), OR... 12 -Fillets with skin
1/4 c Milk
Salt Freshly ground black pepper 1/3 c All-purpose flour
3 tb Vegetable oil
6 tb Unsalted butter
6 lg Mushrooms; thinly sliced
2 tb Fresh lime juice
4 tb Finely chopped fresh parsley
Put the trout in a dish, add the milk, and sprinkle with salt and pepper. Turn them several times to coat well. Set aside. Spread the flour over a flat dish. Remove the trout from the milk and dredge them in the flour. Shake off any excess flour. Heat half of the oil in a nonstick frying pan large enough to hold 3 trout in one layer. Cook them over medium heat for 4 minutes on one side. Turn them and cook for 6 to 8 minutes, or until brown. Transfer the trout to a warm platter and keep them warm. Repeat the process using the remaining oil and fish. Meanwhile, melt 1 TB. of the butter in a frying pan over high heat. Add the mushroom slices and sprinkle with salt and pepper. Saute them, stirring and shaking the pan, until the liquid has evaporated and the mushrooms are nicely browned. Arrange the mushrooms over the trout and sprinkle with the lime juice. Melt the remaining butter in a frying pan over high heat, shaking the pan, until the butter turns hazlenut brown. Pour it over the trout, sprinkle with the parsley, and serve immediately. -----

Pan Seared Ruby Red Trout with Ancient Grains
Pre-cooked Ancient Grains with onions and butternut squash top a pan-seared Ruby Red Trout in this incredible recipe. A sauce of sliced almonds, capers, butter and parsley completes the flavor.
INGREDIENTS
FOR THE GRAINS:
1 tablespoon of olive oil
½ peeled and small diced yellow onion
1 cup of Heinen’s Riced Butternut Squash
1 package of Heinen’s Pre-Cooked Ancient Grains and Seeds
1 teaspoon of unsalted butter
1 teaspoon of chopped thyme
Kosher salt and fresh cracked pepper to taste
FOR THE TROUT:
2 tablespoon of olive oil
Two Brothers Seafood Seasoning
2 pounds of skin on and scored ruby red trout
1 tablespoon of unsalted butter + 4 tablespoons more for the sauce
¼ cup of sliced almonds
1 tablespoon of capers
1 tablespoon of chopped fresh parsley
PREPARATION
1. For the Grains: Add the olive oil to a large sauté pan over medium-high heat and add in the onions and sauté for 2 to 3 minutes or until lightly browned.
2. Next, add in the squash and then the pre-cooked grains and cook for 2 to 3 minutes.
3. Finish with butter, thyme, salt and pepper, and keep warm.
4. For the Trout: Season the fish generously on both sides with the seafood seasoning.
5. Next, add the olive oil to a large saute pan over medium-high heat. Once the oil begins to lightly smoke, add in the fish skin side down and immediately add in the 1 tablespoon of butter.
6. Let the fish cook for 2 to 3 minutes before flipping it over and cook for 2-3 more minutes or until the fish is browned on all sides.
7. Set the fish to the side and add in the almonds, capers, remaining 4 tablespoons of butter and fresh parsley and stir until the butter is completely melted.
8. Pour the butter sauce over the fish and serve next to the grains.
