20-Minute Whole Roasted Branzino!
Tender perfectly roasted whole branzino is an impressive fish dinner that you can make in just over 20 minutes. FULL RECIPE ????

INGREDIENTS:
???? Extra virgin olive oil (I used Early Harvest Greek EVOO)
???? 1 pound whole branzino fish, cleaned, head and tail attached (or whole striped bass, black sea bass, flounder, red snapper)
???? Kosher salt and black pepper
???? ½ lemon, sliced into rounds
???? ½ red onion, sliced
???? 1 cup cherry tomatoes, halved
???? ½ cup chopped fresh dill

Ingredients! Oven Baked Fish
salt to taste
pepper to taste
1 tsp dried mustard
1 tsp smoked paprika
1/3 tsp dried pepper flakes
crackers with chopped parsley (optional)
bake on 350 degrees for 20 minutes

8 oz Sea Bass filets-skin on
½ Cup Eggplant/Aubergine, Sliced
1 Shallots, Sliced
1 large Garlic, Sliced
6 Heirloom Cherry Tomatoes
2 Tablespoons White Wine
2 Tablespoons Tomato Puree
3 Tablespoons Vegetable Stock
2 Tablespoons Olives- sliced
4-5 Sundreid Tomatoes
1 Calabrian Chilies, sliced
Salt and Pepper
Olive Oil
1 Sprig Oregano leaves, Smashed
1 Lemon zest and juice
1 cup Israeli Cous Cous (can be made in 10 minutes or use leftover - follow directions on box or bag)
Method:
Warm couscous or cook per instructions.
Start by heating a pan and adding a tablespoon of oil, start with eggplant and let brown and soften. Grate some fresh lemon zest over and season.
Remove eggplant on towel
Add a teaspoon of oil and add sliced shallots and garlic to pan, let soften
Then add sun-dried tomatoes, large diced pieces of chilies. Deglaze with white wine and add vegetable stock and tomato puree and mix. Then add tomatoes, olives and fresh torn oregano leaves. Add a tablespoon of olive oil and lemon zest to finish. Take off heat.
Meanwhile heat separate pan with olive oil, season fish and sear skin side down, flip fish after 4- 5 min.
Add 1 slice worth of lemon juice to couscous
Plate cous cous, top with tomato sauce and fish, garnish with parsley sprig/ lemon wedge
Whole Baked Fish - Herb Stuffed, with Garlic Butter Dill Sauce
Ask any chef and they'll tell you the best and easiest way to cook fish is to cook it whole. The flesh stays so much juicier and tender compared to cooking fish fillets!
This one is prepared in a really classic way - stuffed with herbs and garlic, served with a garlic butter dill sauce. Insanely easy, insanely delicious!

I have made a video on this beautiful oven baked sea bass!
I purchase frozen seabass fillets from Costco, as they are the best I've come across and its always something I have on hand as they defrost quickly and this meal takes only 15 minutes to cook.
You literally only need a few ingredients and definitely something you can play around with flavours! However, I cook my sea bass just like this every time and it is just melt in your mouth gorgeousness!
Ingredients:
Seabass Fillets ( I used 3)
4 Cloves of Garlic
3 Tablespoons Butter
2 Spring Onions chopped in half
Salt
Pepper
Old Bay Seasoning
Adobo Seasoning (If you dont have this, all purpose is fine)
Parsley - Fresh or Dried works fine.
I am a big fan of dual purpose items and I am trying to move away from nonstick pans, so I use these cast iron skillets from Amazon.
