How To make Mustard Batter Bass
1/3 cup Dijon mustard
or
prepared mustard 1/4 cup water :
plus 1 tablespoon
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper
1 1/2 cups seasoned coating mix
2 1/4 pounds bass fillets -- cut in 1 1/2" pieces
canola oil
In small mixing bowl, combine mustard, water, juice, Worcestershire sauce and c ayenne. Place coating mix in shallow dish. Dip fish first in mustard mixture and then dredge in coating mix to coat. In 10-inch skillet, heat 1/2 inch oil over medium heat. Add fish. Fry three to four minutes or until golden brown. Turn once. Drain on plate linew with a paper towel.

Baked Cod with Garlic And Herb Ritz Crumbs

Ingredients
Good olive oil
4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving
Directions
Preheat the oven to 400 degrees F.
Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don’t worry if some crumbs get into the sauce!)
Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.
Cook’s Note
To make the crumbs, crush the Ritz crackers into the bowl of a food processor fitted with the steel blade and process until finely ground.

Ingredients for Fish Fry:
- Rohu/Katla/Asian Carp fish pieces( 5-6 big pieces)- 500 gms
Marinate with:
- Salt- 1.25 tsp
- Turmeric powder-1/2 tsp
- Red Chilli Powder- 1 tbsp
- Coriander powder- 1.25 tsp
- Garam masala powder- 3/4 tsp (Link to our Garam Masala Recipe:
- Juice of lemon- 2 tsp
- Ginger garlic paste- 1 tbsp
- Curry leaves chopped- 2 tbsp
- Coriander leaves chopped- 2 tbsp
- Oil- 2 tbsp
For frying:
- Oil- 3 tbsp
Preparation:
- Clean and wash the fish pieces.
- Chop the curry leaves and coriander leaves.
- Add all the items for the marinade specified above. Mix it well and set aside for 1 hr.
Process:
- Take a frying pan and heat the oil.
- Now place the fish pieces side by side and fry on medium heat for 3 mins. Reduce the heat to low and continue to fry for another 3 mins.
- Now turn the pieces on the other side and repeat the same on the other side (on medium heat for 3 mins and then on low heat for another 3 mins.)
- Turn it again and continue frying on low heat for 2 mins more on both sides.

Today I’m sharing my easy pan seared tilapia recipe! This recipe will give you fish that is crispy on the outside and perfectly flaky and delicious on the inside! Cook my tilapia recipe on a weeknight for a quick, delicious and easy dinner!

INGREDIENTS:
2 large tilapia fillets
1 tbsp olive oil
2 tbsp butter
2 garlic cloves
1/4 lemon
Parsley for garnish
Dry Batter:
2 tbsp all purpose flour
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp red chilli flakes
1/2 tsp dried oregano
1/4 tsp dried thyme
METHOD:
1. Clean and pat dry 2 large tilapia fillets. Sprinkle with a pinch of salt and set aside for 5 mins
2. In a plate, mix all the ingredients mentioned under dry batter. Coat the fish on both sides with the dry batter and gently shake off excess
3. On low flame, heat 1 tbsp olive oil in a skillet/wide pan and infuse it with 2 crushed garlic cloves. Once the garlic starts to brown, remove it from the pan. This way we get a subtle garlic flavor in the dish
4. Next melt 2 tbsp butter in the oil. If using salted, don't add salt to the dry batter or it might end up too salty
5. Set flame to medium and gently place the fish. Fry for 3-4 mins per side. Be careful while flipping as it can break easily
6. Once the fish is done, squeeze the juice of 1/4 lemon all over and garnish with fresh parsley
7. Serve these delicious pan fried Tilapia fillets with sautéed veggies or a salad

• What other fish can be used?
Bass, cod, snapper, halibut
• Can prawns be used?
Yes
• No parsley?
Coriander/cilantro can also be used
• No dried oregano/thyme?
Use 1 tsp mixed herbs/Italian seasoning
• No red chilli flakes
Use red chilli powder

TIPS:
• Be careful while flipping the fish as it can break
• Adding lemon juice at the end helps cut the richness of the butter
• Store leftover dry batter in an airtight container in the freezer and use it the next time you make this recipe
