쉬폰케이크 틀 1호
16.5cm chiffon pan
-black olive chiffon cake 블랙 올리브 쉬폰 케이크
105g(3.7oz) egg white 계란 흰자
37g(7tsp) sugar 설탕
30g(1oz) egg yolk 계란 노른자
30g(2Tbsp) sugar 설탕
33g(5+1/2tsp) warm water 따뜻한 물
37g(1+1/2Tbsp) olive oil 올리브 오일
53g(6Tbsp) cake flour 박력분
4.5g(1tsp) baking powder 베이킹 파우더
1g(1/8tsp) salt 소금
25g(3Tbsp) black oilves 블랙 올리브
-cheddar cheese cream 황치즈 크림
250ml(1cup plus 1Tbsp) french cream 프랑스 유크림
20g(4tsp) sugar 설탕
25g(3Tbsp) cheddar cheese powder mix 황치즈 가루
-decoration 장식
120ml(1/2cup) french cream 프랑스 크림
12g(2+1/2tsp) sugar 설탕

1. 오븐을 섭씨 170도(화씨 340도)로 예열해주세요. 블랙 올리브를 잘게 썰어 준비해주세요.
2. 볼에 계란 흰자를 넣어준 다음 휘핑 해주세요. 거품이 몽글몽글 생겨나면 설탕을 2~3번에 나눠 넣어주며 휘핑해줍니다. 계란흰자(머랭)이 단단한 뿔이 생길 때 까지 섞어줍니다.
3. 볼에 계란노른자와 설탕을 넣고 아이보리색이 될때까지 휘핑기로 섞어주세요.
4. 휘핑한 계란 노른자 혼합물에 식용유와 따뜻한 물, 바닐라 익스트랙을 넣고 가볍게 섞어주세요.
5. 계란 노른자 혼합물에 박력분, 베이킹파우더와 소금을 체쳐 넣어준 다음, 잘 섞어주세요.
6. 계란 노른자 혼합물에 머랭(휘핑한 계란흰자)의 반을 넣고 골고루 섞어주세요. 다진 블랙올리브를 넣고 다시 한 번 골고루 섞어준 다음, 남은 머랭을 넣고 가볍게 섞어 완성해주세요.
7. 분무기를 이용하여 쉬폰틀에 물을 뿌려준 다음, 반죽을 채워줍니다. 그리고 섭씨 170도(화씨 340도로 예열된 오븐에 30분간 구워줍니다. 구워진 쉬폰케이크는 컵 등에 받쳐 뒤집어진 상태로 완전히 식힌 다음 틀에서 분리해주세요.
8. 볼에 프랑스 크림, 설탕, 황치즈가루를 함께 넣어준 다음 단단한 모양이 될 때 까지 휘핑해줍니다. 그리고 데코용 크림을 만들기 위해 프랑스 크림, 설탕을 한 그릇에 넣고 단단한 뿔이 생길때까지 휘핑 후, 짤주머니에 담아 준비합니다.
9. 황치즈 크림으로 케이크를 아이싱해주세요. 그리고 윗면에는 데코용 휘핑크림과 타임으로 장식 해 완성해주세요.

BROCCOLI CHEDDAR WITH BAKED POTATOES ????
Ingredients:
????Medium russet potatoes - 2 tbsp. ????Extra-virgin olive oil - 3 tbsp. ????Unsalted butter, melted 1/2 c.
????Sour cream 2 c.
????Cheddar, grated, divided - 2 c. ????Steamed broccoli, finely chopped
????1/2 tsp. onion powder
????Kosher salt
????Freshly ground black pepper
????Milk, warm - 1/4 c
Preparation:
1️⃣ Preheat oven to 425 degrees F.
2️⃣ Poke potatoes all over with a fork and rub with olive oil. Bake until soft, about 1 hour. Let rest until cool enough to handle, 15 minutes.
3️⃣ Slice potatoes half, then scoop out most of the flesh into a large bowl. Mash together with butter, sour cream, 1½ c. cheddar, and broccoli. Mix in onion powder, then season with salt and pepper.
4️⃣ Pour in warm milk and mix to combine.
5️⃣ Divide filling among 8 potato halves, then sprinkle with remaining cheddar. Bake in oven until filling is warmed through and cheese is bubbly, 15 minutes more.
