30 Minute Broccoli Cheddar Soup (Better than Panera!)
???? Healthy broccoli cheddar soup packed with carrots, broccoli, garlic, and cheese. This creamy velvety soup is much better than Panera's broccoli cheddar soup and can be made in under 30 minutes for a fraction of the price! ????????

Ingredients
4 tablespoons butter ½ stick
½ medium onion chopped
2-3 cloves garlic minced
4 tablespoon AP flour
2 cups low sodium chicken or vegetable stock
1 tsp kosher salt
½ tsp black pepper
¼ tsp or ground nutmeg, optional
3 cups broccoli florets or 1 large head, cut into small pieces
1 large carrot grated, julienned or finely chopped
2 cups half & half or milk or light or heavy cream
8 oz block grated cheddar cheese or 2 cups (mild, medium, or sharp )
Melt butter in a large dutch oven or pot over medium-high heat. Add the onion and cook 3-4 minutes or until softened and light gold. Add the garlic and saute for another minute.
Add flour and whisk for 1-2 minutes or until the flour begins to turn golden in color. Pour in the chicken stock, broccoli florets, carrots, and seasoning. Bring to a boil then reduce heat to medium-low and simmer for 15 minutes or until the broccoli and carrots are cooked through.
Stir in half & half and cheddar cheese and simmer for another minute. Taste and adjust seasoning if needed.
Serve with toasted crusty bread or in a bread bowl if desired.

Olivari Bacon Cheddar Cornbread
This savory olive oil cornbread is a comfort food classic that’s a welcoming side dish to any feast, be it big or small.
Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes
Serves: 8
Ingredients:
1/3 cup Olivari Extra Virgin Olive Oil, divided
1 1/4 cups all-purpose flour
3/4 cup finely ground cornmeal
1/3 cup granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp each salt and pepper
2 eggs
1 cup buttermilk
1/2 cup shredded aged Cheddar cheese
4 strips bacon, cooked and crumbled
2 green onions, thinly sliced
1 tbsp finely chopped fresh chives
Instructions:
1. Preheat oven to 425°F. In large bowl, whisk together flour, cornmeal, sugar, baking powder, baking soda, salt and pepper until well combined.
2. In separate bowl, whisk together eggs, buttermilk and 1/4 cup olive oil until blended; stir into flour mixture just until moistened. Fold in cheese, bacon, green onions and chives.
3. Meanwhile, heat remaining oil in 9-inch cast iron skillet pan set over medium heat. Scrape batter into prepared pan and smooth top.
4. Transfer to oven. Bake for 15 to 18 minutes or until golden brown and cornbread springs back when touched lightly in center. Transfer to rack; let cool completely or serve warm.
Tips:
• You can substitute milk mixed with 1 tbsp lemon juice for buttermilk. Let stand for 15 minutes before using.
• Substitute Monterey Jack for Cheddar cheese if desired.
• For a spicy twist, fold 1 seeded and minced jalapeño pepper into the batter.
