How to Make Perfect Hard-boiled Eggs + Egg Salad Recipe
RECIPE:
This is a great egg salad recipe that makes for a great lunch! I also show you how to make perfectly cooked hard-boiled eggs.
Recipe ingredients:
8 large eggs
1 rib celery, chopped
2 scallions, sliced
1 tbsp packed chopped fresh dill
2 tbsp greek yogurt
2 tbsp mayonnaise
2-3 tsp dijon mustard
pinch of salt
black pepper, to taste
Directions:
Place the eggs in a single layer in the bottom of a saucepan, and cover them with enough cold water to rise an inch above the eggs. Place over high heat, and once the water has come to a boil, immediately remove the pan from the heat and cover with a lid. Let sit in the hot water for 10 minutes, then drain the eggs. Peel them under cold, running water.
Roughly chop the eggs, then mix with the remaining ingredients. Serve on crackers or in sandwiches. Enjoy!

The Fifteen Spatulas website:
Joanne created Fifteen Spatulas to show people the cooking from scratch isn't as intimidating as they might think. On the blog you'll find recipes with step-by-step photos and explanations of the how's and why's of cooking (like why patting a steak dry before searing is so important, or how the hardness of your tap water can affect the strength of your bread dough). Happy cooking!
