This delicious and easy Broccoli and Swiss Cheese Quiche recipe is perfect for Sunday brunch, a potluck, or a holiday gathering. Serve with a fresh salad and wash it down with a mimosa!
Buy a frozen pre-made pie crust bottom for this quiche recipe and save a ton of time.
Quiches can also be made and cooked ahead of time if you don't want to cook in the morning (think holidays!).
Variations on Quiche Recipes:
Once you know how to cook one quiche, then you basically know how to cook all quiches. Fillings and cheese are interchangeable at the same ratios.
For example, change the Swiss cheese to feta cheese, cheddar cheese, Gouda, whatever cheese you love.
Veggies can be switched as well, just try to keep the filling rate about the same in volume. Eyeballing is fine. That's how ya learn sometimes!
Like bacon or ham? Add it in. Bacon will need to be cooked first and sliced or diced. Ham is already cooked so throw it in with all the other ingredients for this broccoli quiche recipe.
I prefer the creaminess of using half and half but if saving on calories or fat is a concern or you simply don't have it on hand, then substitute milk instead.
Some grocery stores sell cooked vegetables in their buffet. Wanna make a fast and easy quiche? Grab some cooked veggies or antipasto from the salad or breakfast buffet and save time spent chopping in the kitchen.
TIP: Cover pie crust with aluminum foil if it starts to get to dark on the edges but the middle is still not done. Or get fancy with an adjustable pie crust shield.
Serving Size: 4
Ingredients:
-1 pre-made frozen pie crust
-4 medium eggs, beaten
-1 ¼ cup half and half
- 2 cups broccoli florets, chopped into smaller bite size pieces
-4 ounces (1 cup) Swiss cheese, grated
-½ teaspoon salt
-½ teaspoon black pepper
-¼ teaspoon ground nutmeg
Instructions:
-Preheat oven to 375F.
-In a bowl whisk together: eggs, salt, pepper, and nutmeg then whisk in half and half.
-Layer the broccoli and cheese in the frozen pie crust (Do not defrost the pie crust).
-Pour egg mixture over the top (you may have a little extra if your eggs were large - scramble it later if it won't fit.).
-Line a baking sheet with aluminum foil for easy clean up. Place the quiche on top of the baking sheet in case it boils over and also so it's easier to put in and take out of the oven.
-Bake for 45-50 minutes or until a knife in the center comes out clean and the top is turning a slight brown. If you're worried about the crust being too brown, then add a pie crust shield or place aluminum foil around the crust ~20 minutes in.
-Turn on the broiler for a minute or two if the top is not browned (watching carefully - you don't want it to burn).
-Let sit ~ 15 minutes before slicing. Serve warm, cold, or room temperature.

Vegetable quiche
20X30cm (8/12 inch) size pan or 22cm (8.5) diameter pan.
Ingredients:
2 carrots
1 potato
A glass of broccoli
1 onion
2 green onions
4 eggs (L size)
2 tablespoons olive oil
120g (1/2 cup) sour cream
50g (2/3 cup) mozzarella cheese
Salt and black pepper (about 1/2 teaspoon salt and 1/2 teaspoon black pepper)
140g (1 cup) all purpose flour
10g (2 teaspoons) baking powder
preparation method:
1. Rinse the vegetables well and cut into small cubes.
2. In a large bowl, place eggs, olive oil, cheese, salt and pepper and mix well.
3. Add flour and baking powder and mix until all the flour is assimilated into the mixture.
4. Add all the vegetables and mix gently.
5. Transfer to a pan, and bake in a pre-heated oven at 355f (180c) degrees for 40-50 minutes. The pie is ready when golden and stable.
6. Allow the quiche to cool completely, and only then cut.
Note:
You can replace the vegetables with other vegetables that you like or prefer.

300g / 10½oz Plain or all purpose flour
100g / 3½oz Cold water
150g / 5¼oz Cold butter
1tsp / 6g Table salt or 1½tsp / 6g kosher salt
Ingredients for the egg mixture for both quiches
8 Large eggs
300g or mls / 10½oz Single cream
100g or mls / 3½oz Milk full or half fat
½tsp Salt
½tsp Ground black pepper
Ingredients for the quiche Lorraine
60g / 2oz Mature grated cheddar or gruyere cheese
120g / 4oz or 8 Rashers of smoked or unsmoked streaky bacon
100g / 3½oz of diced boiled ham
Half the egg mixture I made earlier

175g / 6oz Tinned or fresh skinless and boneless salmon
100g / 3½oz Broccoli florets
60g / 2oz Mature cheddar cheese
