Skinny Broccoli and Cheese Quiche Recipe By Risa Weiner

Easy, low fat, low sodium, high in fibre and high protein too! Best of all its absolutely delicious!!! Of course!!! Versatile or make it like I do!! But if you change it please account for the nutritional information and smart points!
Preheat your oven to 350 degree's and bake for 45 Minutes or so . It Should look solid!
Line a large cookie sheet with parchment paper or a 9x13 pyrex dish.
INGREDIENTS :
1. 5 or more extra large or large egg or add an extra egg if using large
2. 1/3 cup of low fat Kraft mozzarella cheese or any kind 3sp
3. 4 or less cups of cooked broccoli or thawed frozen
4. 250 GMs of chicken strips are optional or other proteins!
5. 2tbs of shredded Zerto 1sp Romano Cheese (optional or add fresh parmasean)
6. 1 large vidalia onion optional or any kind
7. 1/3 cup or more cremini or any mushrooms also optional or add any veggies you want
8. Salt and pepper to taste
9. 1tsp Worcester sauce
10. 1tsp Frank's Hot sauce optional
11. 1 tsp each of Onion (I forgot it but I usually add it to everything) and garlic powder
12. 1/3 cup or more choice of low fat milk
Directions:.
If you haven't already boil up your broccoli drain and cool or thaw if frozen.
In a large skillet spray well with choice of cooking spray to a medium to high temperature stove top.
Add chopped onions and sauté until carmalized
Add mushrooms or other vegetables if you want
Set aside once cooked and allow to cool
In a large bowl add eggs, milk, cheeses, broccoli, chicken or choice of protein is optional spices
Then add onion mixture
Mix well
Add to cookie sheet or choice of dish
BAKE FOR 45 MINUTES!
SHOULD LOOK SOLID BEFORE TAKING IT OUT!
EAT IMMEDIATELY WITH A SALAD, FRUIT, YOGURT, CHOICE OF BREAD!
STORE UP TO FIVE DAYS IN YOUR FRIDGE IN A SEALED CONTAINER!

Another common tradition that people also like to do is gather for Easter brunch! This broccoli cheddar quiche recipe is perfect for your Easter brunch! Whenever I think of Easter, I think of eggs and making a quiche certainly uses quite a few eggs. ingredients :
1 head of broccoli (400g)
250 g of pasta
1/2 onion , chopped
2 garlic cloves
1 tbsp of vegetable oil
2 tsp of salt
a pinch of black pepper
1/4 tsp of nutmeg
4 tbsp of butter (60 g)
4 tbsp of flour ( 30g)
3 cups of milk (700 ml)
1/2 cup of shredded mozzarella cheese (100 g)
1/2 cup of shredded cheddar or gouda cheese (100 g)

Broccoli Quiche Recipe
Broccoli Quiche
Ingredients (to fill a round 8 inch baking pan)
For the shortcrust pastry;
200g of plain flour
100g of cold salted butter
2 tbsp of water
For the filling;
250ml of whole milk
100ml of double cream
3 eggs
100g of mature cheddar cheese
Broccoli
Red onion
Handful of fresh Chopped chives & chive flowers
Handful of sliced Radish
Chopped kale leaves
Salt & pepper to season
(Optional)Cooked chopped ham
Method
Pastry.
1. Place the flour & butter into a bowl, using your fingertips rub the butter into the flour until it looks like breadcrumbs( or whizz in a food processor).
2. Add the water, mix with a wood spoon.
3. Knead gently until you have a smooth ball.
4. Place on a floured surface, roll out the dough until it is around 3 cm larger than your chosen baking tin.
5. Place in a greased tin, be sure to push it gently into the corners of the tin.
6. Don't trim the edges ( this can be done later if you like, but I rarely bother..I like the nobbly bits ????)
7. Heat oven to 180°
8. Blind bake-Place some baking paper on top of the pastry, add baking beans to weigh it down ( if you don't have baking beans uncooked rice or pasta will do the job fine)
9. Pop in the oven for 15 minutes, then remove baking paper and beans and put back in the oven for a further 5 minutes.
10. Set aside to cool.
Filling
1. Bring a pan of water to boil, simmer broccoli for 1 minute.
2. In a bowl whisk the eggs, cream & milk, tip into the pastry case.
3. Now add all the vegetables , chopped chives & ham, sprinkle on the cheese, season with salt and pepper.
4. Pop in the oven at 200° for 35-40 minutes.
