Broccoli Cheese Roll Ups
Can't get anyone to eat broccoli? Try this. You may just having them singing broccoli praises.
Broccoli Cheese Roll Ups
Serves: 5-6
1/2 cup very warm water
1 teaspoon active dry yeast
1 and ¼ cups unbleached all purpose flour + a little more for rolling
1 teaspoon sugar
½ teaspoon kosher salt
1 Tablespoon olive oil
1- 1.5 cups steamed and chopped broccoli (little pieces)
1/2 cup freshly shredded cheddar cheese
non stick spray
Preheat oven to 400°F
In a medium bowl add water, sugar and yeast and stir - allow to rest for 3-4 minutes to allow yeast to proof
Add flour, salt and oil and stir - form into a ball and allow to rest for 5 minutes
Roll out on well floured board into a 12-14 inch rectangle
Sprinkle with broccoli pieces and then cheese
Starting from the end closest to you, roll up and place seam side down
Slice into even 1- 1.5 pieces
Arrange on a baking pan sprayed with non stick spray, leaving space in between
Bake for 15-20 minutes (depending on your oven), or until the tops start to brown
Remove from pan immediately
Serve warm or at room temperature
How to make Ham, Broccoli and Cheese Roll-ups (quick and easy)
I love the combination of ham, broccoli and cheese - and these roll-ups are so quick and easy to make. I came up with them one night when I was trying to figure out what to do with some leftover cream cheese and tortillas, and we really like them.
Preheat oven to 350F (180C)
INGREDIENTS:
8 flour tortillas (8)
250-300g diced ham (about 2.5 cups)
350-400g broccoli, microwaved 4-5 minutes, then chopped
1-1/2 cup shredded cheese
1/2 tub Philadelphia spreadable cream cheese
1 can cream of chicken soup (or broccoli or asparagus or celery)
1/3 cup milk
METHOD:
Cook the broccoli about 4-5 minutes in the microwave to partially cook (I use frozen) and then chop into bite size pieces. In a large bowl mix the broccoli, ham, shredded cheese, cream cheese, and about 1/3 of the soup. Mix well, and put about 2 large spoonfuls in each tortilla, then roll up like a burrito.
Spray a rectangular baking dish with non-stick spray and arrange the roll-ups in the pan. Mix the milk with the remaining soup and pour over the top. Bake for about 20-25 minutes, depending on your oven.
I would keep a close watch the first time so you'll have an idea how long they take - I also find different brands of tortillas brown faster than others - this time they were done in 12 minutes because my oven was set for fan-forced.

Broccoli and Cheese Crescent Ring
Easy crescent ring stuffed with broccoli and cheese.
Ingredients:
1 can crescent rolls
2 cups broccoli florets, steamed
1 cup shredded cheddar cheese
1/4 cup melted butter
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried parsley
INSTRUCTIONS
Preheat oven to 375 F. In a small bowl, combine melted butter with salt, garlic powder, and dried parsley. Unroll crescent rolls and seperate into triangles. Place crescent rolls onto a large greased baking sheet in a circle.
Place broccoli over the crescent rolls, followed by cheese. Wrap each crescent roll over the filling, sealing it tightly. Brush the crescent rolls with the butter mixture. Bake for 15-20 minutes.

●2 (8 ounce) packages refrigerated crescent rolls

Greetings! It's one of those nights where we need to be in three places at one time. I did not plan to make anything in the crock pot, and I should have (lesson learned). So I needed to come up with a meal that could cook in between drop off, pick up and various other tasks that needed to be done.
This casserole bake is so easy you won't believe it! It basically involves dump, dump, chop, dump, drizzle and sprinkle. That's it!
I used a large family size bag of Mrs. T potato and cheddar Pierogies, one 14 ounce bag of frozen broccoli florets, one 1 pound ham steak that I cubed, 1 stick of melted butter and 1 cup of shredded cheddar cheese. Quick and easy.
I put the pierogies in the bottom of the pan, topped that with the broccoli and the ham, drizzled everything with melted butter, topped with shredded cheese covered the pan with aluminum foil and baked in a 350 degree oven for 45 minutes. Super easy!
When this came out of the oven it was hot and bubbly. The pierogies had absorbed some of that butter and the cheese had melted over everything, enveloping the broccoli and ham in its ooey gooey goodness. This was dinner, and so good it was! So good that I think I even surprised myself! You must give this a try! There is no need to serve anything else along with this unless you want to. Everything is in the pan, meat, veg and starch. Delicious! We will definitely be having this one again. It was so easy to throw together and I didn't need to think about it.
