2 packets (around 800 g) frozen broccoli, thawed and dried;
1 tsp minced garlic;
150 g (5 oz) herbed processed cheese;
½ cup full-fat cream;
1 cup sharp cheese, shredded;
1 cup ritz crackers, crumbled;
⅓ cup melted butter.

1 lb broccoli florets
3 tomatoes, large, divided
¾ lb onion, diced
2 cloves garlic, minced
¾ cup basil leaves, chopped
8 oz mozzarella cheese, grated, divided
3 eggs, large
1 cup cottage cheese
1 lemon, juiced
¾ cup parmesan cheese, grated, divided
2 tsp salt
1 tsp black pepper
For Garnish:
parsley

0:30 Preheat the oven to 375 degrees F.
0:33 Blanch the broccoli for 2 minutes until tender and drain.
0:47 Chop the tomatoes and add them to the broccoli.
0:51 Stir in the onion, garlic, and basil.
1:05 Add 4 ounces of the mozzarella into the mixture and stir.
1:19 Transfer this vegetable mixture to a baking dish and set aside.
1:32 Whisk the eggs, cottage cheese, and lemon juice together in a bowl. Add ½ cup of Parmesan.

Cheesy Broccoli Casserole
8 cups broccoli, cooked
10.5 ounces cheddar cheese soup
1 cup mayonnaise
3 cups (12 ounces) Velveeta Shreds, divided
2 eggs, beaten
1/2 cup onion, diced
1 teaspoon salt
1 teaspoon pepper
About 45 Ritz Crackers
4 Tablespoons melted butter
Preheat your oven to 400°.
Cook your broccoli, allow it to drain well, and cool completely. Place it in a greased 9” x 13” baking dish. Set aside.
In a large bowl, stir together the cheddar cheese soup, mayonnaise, two cups of Velveeta Shreds, eggs,  onion, salt, and pepper. Spread this evenly over your broccoli. Top with one cup of Velveeta Shreds.
Crush the Ritz crackers and stir in the melted butter. Spread crackers evenly over the top of your broccoli casserole.
Bake for 30 minutes or until the casserole is bubbly and the crackers are lightly browned. Let cool for 10 minutes before serving.

Broccoli Casserole:
1 cup diced onion
1 cup diced celery
1 big head of broccoli
2 cans cream of celery (or mushroom) soup
1/3 block of velveeta (or more)
2 1/2 to 3 cups of cooked white rice
Seasonings to taste..such as:
Salt
Pepper
Cayenne
Natures seasoning
Complete seasoning
Cracker Topping:
2 to 3 sleeves of Ritz crackers (crushed)
1 stick of melted butter
Bake covered at 350 for about 45 minutes. Remove from oven, add rice and stir. Put your cracker topping on, then stick back into oven for an additional 20 minutes, or until bubbly.
Allow to set for at least 15 minutes before serving.
