How To make Briami
1 Eggplant
2 lb Zucchini
4 md Potatoes
2 Green peppers
1 Red pepper
2 md Onions
1 c Olive oil
4 md Tomatoes
2 Garlic cloves
1 t Sugar
Salt and pepper, -to taste Prepare the vegetables: Cut the eggplant, zucchini and potatoes in bite sized chunks (do not peel the zucchini or the eggplant). Remove the stems and seeds from the peppers and slice them into strips. Peel and slice the onions. Dice the tomatoes. Saute the vegetables except the tomatoes in the olive oil in small batches. Saute each batch for 2 or 3 minutes, then remove from the pan, trying to drain some of the oil so that enough oil is left for the next batch. When you're done, most (if not all) of the oil should be gone from the pan. Place the sauteed vegetables in a baking dish and toss them briefly so that you won't get only one kind of vegetable in one place. Add the tomatoes into the pan and saute for a couple of minutes. Crush the garlic and add to the tomatoes. Add the sugar, salt and pepper to taste and simmer for another minute. Pour the tomato sauce on top of the vegetables and bake at 350 degrees F. or until the vegetables are tender. Serve with plenty of fresh bread and, if you like, some feta cheese on the side. 1 LB Eggplant

8 OZ Goat Cheese
6 OZ Feta Cheese

Briam or the Greek recipe of roasted vegetables, very simple to prepare and very delicious! In other words the Greek way of cooking vegetables. This delicious recipe is going to be your favourite way to cook your summer veggies again and again.
4 potatoes (medium-size potatoes), peeled and sliced
4 zucchini squash, sliced
3 bell peppers, sliced
3 carrots, sliced into rounds
1 large onion or 2 smaller (cut the onion in half first, and then slice)
½ cup fresh parsley, chopped
½ cup Greek extra virgin olive oil
½ cup tomato sauce
2 garlic cloves, chopped
2 tsp dried oregano
Salt and pepper
Preheat your oven to 355F (180C) and start preparing your vegetables. Slicing and putting in the tray.
Add the Greek Extra Virgin olive oil, garlic, tomato sauce, parsley, dried oregano, salt and pepper.
Give them a good stir. Mix well and use your hands if necessary.
Cover the tray with aluminum foil and bake in the oven for 30 mins. This way the veggies are going to boil first without drying outside and being raw inside. Remove the aluminum foil and place back in the oven for another 30 minutes.
Remove and allow to cool for 5 minutes before serving. The briam should not be too wet or dry. Best way to serve this is with a cold beer, feta cheese and freshly baked bread. You could also have some Greek salad that goes well with everything or even with Tzatziki!

Note: The size matters in this recipe! The size of the veggies is the key to the cooking time. Small size, less cooking time. Bigger size. longer cooking time! So make sure before removing the aluminum foil and cook again for 30 mins that your veggies are not still raw and they are soft and juicy.

Hi guys!
Today I decided to make briam and film it for you. Briam is a Greek Dish very tasty full of vegetables! We usually make it in summer because all the vegies are in season and they are full of flavor! Briam usually contains zucchinis and potatoes but if you add other veggies we call it tourlou!
To me briam can have every veggie you have in your kitchen so allow me to call it just briam and not tourlou!
