Brazilian Potato Salad - so delicious and flavorful!
Ingredients:
1. 3 large potatoes
2. 1/2 cup pickles, chopped
3. 1/2 cup green olives, sliced
4. 1/2 cup sweet corn
5. 1/2 tbsp. salt
6. 1/2 tsp. black pepper
7. 3/4 cup mayonnaise
8. 2 cups peas and carrots (thawed and cooked)
Directions:
1. Cut each potato in half, add to a pot of cold water and heat over medium-high heat until water boils.
2. Lower heat and cook until fork tender (about 25 minutes).
3. Drain potatoes and cut into chunky squares.
4. Place in a bowl, add peas and carrots, corn, olives, pickles and mix.
5. Add mayonnaise, salt and pepper and mix until well combined.
**This dish is best served cold, place in refrigerator for a couple hours before serving.

Here is how to prepare the Brazilian Potato Salad called simply Mayonnaise in Brazil.
Recipe Measurements
**We use 1 potato per person, and 1 boiled egg yolk every 5 potatoes.
For a 2 person recipe, you will need:
4 Potatoes
2 boiled eggs
250ml of oil (canola preferable)
1 egg
A 6th of an onion (grated)
Salt
1 Lime

How to prepare it:
1. Boil the 2 eggs and the potatoes for 20min
2. Peel off the potatoes and put it in the refrigerator
3. Smash 1 boiled egg yolk and start adding the canola oil
4. Add the raw egg yolk
5. Continue adding canola oil and mixing it, when consistency is good (watch the video for details) add is to the potatoes
6. Add the salt (accordingly to your taste)
7. Squeeze half of a lime or more (accordingly to your taste), the lime is important to remove the egg taste from the mayo
8. Finally, add the remaining boiled egg (sliced), mix that well, adjust the salt as needed and that is it! You have the Brazilian Potato Salad!

Ingredients:
(Ingredientes)
1/2 red onion
(1/2 cebola roxa)
2 Italian tomatoes
(2 tomates italiano)
1 red pepper
(1 pimentão vermelho)
1 yellow pepper
(1 pimentão amarelo)
2 limes
(2 limões)
Parsley to your taste
(Salsinha a gosto)
Salt and pepper

First cut the onion, then the tomatoes, the peppers in small cubes.
(Primeiro corte a cebola, os tomates, os pimentões em cubos pequenos)
Then cut the parsley and add it to the mix.
(Depois corte a salsinha e adicione a mistura)
Squeeze the 2 limes and add salt, pepper and a bit of olive oil.

Mix everything well and it is ready to eat.
