Brigadeiro (Brazilian Chocolate Truffles)
**Brigadeiros**
Makes about 20
14 oz can of Sweetened Condensed Milk
3 Tablespoon unsalted butter
1/4 cup natural unsweetened cocoa powder
1/2 teaspoon salt
1 teaspoon vanilla extract
6 Tablespoon cold water
1. In a medium heavy pot over medium heat, melt the butter, then stir in the sweetened condensed milk, salt. Dissolve the cocoa powder in cold water and add to the sauce pan.
2. Cook the mixture, stirring, until very smooth and slightly thickened add starts to boil. Add the vanilla extract and continue to cook until very thick and candy mass will hold it shape.
3. Transfer candy to buttered dish and cover with plastic wrap. Cool in the fridge for 1 hour.
4. Once cool, shape into 1 tablespoon size balls and roll in chocolate sprinkles.
5. Drop candy into mini cupcake liners and store in the fridge until ready to serve.
6. Serve cold or at room temp.

INGREDIENTS (Makes 24-26) ►
150 grams of dark chocolate; I prefer 100 grams of bitter (containing 70% cocoa solids) and 50 grams of semi sweet (containing 50% cocoa solids) but you can use your favourite
A can (400 grams) of sweetened condensed milk
A generous pinch of salt ( I like about 1/8th tsp of sea salt)
20 grams of butter and a little more to grease a plate and your palms later
A total of half a cup of sprinkles of your choice; I like chocolate vermicelli sprinkles, desiccated coconut, crushed nuts, rainbow sprinkles

INGREDIENTS:
For batter:
Sugar 2 cups
Flour 1 3/4 cups
Cocoa 3/4 cup
Baking Soda 1 1/2 tsp
Baking Powder 1 1/2 tsp
Salt 1 tsp
2 eggs
Milk 1 cup
Oil 1/2 cup
Vanilla Extract 2 tsp
Boiling Water 1 cup
For icing:
Butter 1 cup
Cocoa 1 1/2 cup
Powdered Sugar 2 cups
Milk 2/3 cup
Vanilla Extract 1 tsp
STEP-BY-STEP INSTRUCTIONS:
Preheat oven to 360F / 180C. Grase and flour two 9-in baking pans. Set aside.
In the large bowl of a standing mixer, stir together flour, sugar, cocoa, baking soda, baking powder and salt.
Add eggs, milk, vegetable oil and vanilla extract. Beat until smooth about 3 minutes.
Stir in boiling water. You can use rubber spatula to stir. Batter will be very runny.
Pour batter evenly between the two pans and bake on middle rack of oven for about 30-35 minutes, until toothpick inserted in centre comes out clean with just a few moist crumbs attached.
Let it cool about 10 minutes before removing from pans. Than cool completely.
In the meantime, prepare a chocolate buttercream frosting. Use a standing mixer to beat the butter until fluffy.
Finely add in cocoa, powdered sugar, milk and vanilla extract. Mix until smooth.
Cut each cake horizontally.
Smear evenly 2-3 heaped tbsp buttercream frosting over the first layer of cake, cover with second layer and buttercream frosting and continue that process with remaining layers of cake and buttercream frosting. Spread buttercream frosting evenly with a spatula all over the cake.

PRO TIP
You can also line baking pans with parchment paper circles.
It's good idea to substitute water for 1 cup of hot coffee!

Hello and Happy Holidays my Friends!
Today I am making one of my favorite Beverages during the Holidays and Winter Months, Hot Chocolate! But not your ordinary Hot Chocolate, making Brazilian Hot Chocolate!
Brazilian Hot Chocolate is thick, rich, creamy, and uses Sweetened Condensed Milk and Coffee. It is so delicious and full of Chocolate Goodness! Great to serve at Holiday Parties, Wrapping Gifts, or anytime!

3 cups milk (any milk of your choice)
1/2 cup sweetened condensed milk
4 tbsp unsweetened cocoa powder
1/2 cup chocolate chips, melted (milk, semi-sweet, or dark)
1 tsp pure vanilla extract
1 shot (1 tsp) of espresso or coffee (original or decaf), optional
Garnishes: Marshmallows, chocolate chips, whipped cream, cinnamon stick
Note: You may omit the Coffee or Espresso if serving to Children.
In a large pot over medium-low heat, add milk and heat for 5 minutes. Then add and stir in sweetened condensed milk and heat for 2-3 minutes. Next stir in cocoa powder then add melted chocolate chips. Stir nonstop so it doesn’t stick to the pot. Heat until creamy for about 10-12 minutes. Remove from stove and stir in vanilla and espresso or coffee, if using. Serve hot chocolate into cups and add garnishes and serve.
