Rum balls recipe—decadent, chocolatey, rum-soaked treats for the holidays ahead
Rum balls recipe: Many Calcuttans have grown up eating rum balls from Kathleen, Nahoum's, or Flury's, and many more. Rum balls were developed as a way for bakeries to use up leftover cakes and trimmings, but they are delicious—very often tastier than the cakes they were made from! They are the perfect gifts for holiday parties, as they are easy to make, easy to transport and easy to consume without making a mess—but most importantly they are very rich, very satisfying, and they have rum! Could it BE any better?
In this recipe we are starting with a readymade fruitcake, but if you have some leftovers from a fruitcake you made, put it in your rum balls! Use the recipe as a guide because depending on the cake you are using the quantities of rum or corn syrup may need to be adjusted. If it is too shaggy, add more cake. If it is dry, add some rum. We are keeping the frosting simple by dipping the balls in dark chocolate, but there are many possible variations. Hope you give these a try!

GEORGE WASHINGTON'S EGGNOG
ORIGINAL 18TH CENTURY RECIPE
One quart cream, one quart milk, one dozen tablespoons sugar, one pint brandy, ½ pint rye whiskey, ½ pint Jamaica rum, ¼ pint sherry - mix liquor first, then separate yolks and whites of 12 eggs, add sugar to beaten yolks, mix well. Add milk and cream, slowly beating. Beat whites of eggs until stiff and fold slowly into mixture. Let set in cool place for several days. Taste frequently.
MODERN RECIPE
INGREDIENTS
-1 Quart (950ml) Cream
- 1 Quart (950ml) Whole Milk
- 3/4 Cup (150g) Sugar
- 12 Medium eggs (or 10 large or 8 extra large)
- 2 Cups (475ml) Brandy
- 1 Cup (235ml) Rye Whiskey
- 1 Cup (235ml) Dark Rum
- 1/2 Cup (120ml) Sherry
- 1 Teaspoon Nutmeg (Optional)
METHOD
1. Separate the eggs and beat the yolks until they are a smooth pale yellow. Then slowly add the sugar in while beating on low. Next add the cream and milk while beating and then the liquor and mix until smooth. If you are going to add nutmeg or any other spices, add them now.
2. In a separate bowl, whisk the egg whites until they form stiff peaks. Then fold them into the yolk and cream mixture until there are no streaks. At this point the eggnog is ready to serve, though it is best aged in a cool spot, like the refrigerator, for 4 - 5 days or longer.

Christmas Mince Pies Made Easy
It’s that time of year yet again and it wouldn’t be Christmas without a Mince Pie
My Simple Homemade Mince Pie Recipe is packed full of delicious homemade Fruit filling and finished off with a sweet super thin orange pastry. This tasty treat couldn’t get more Christmassy if you tried.
The Mince filling (even though it doesn’t actually contain animal) is super sweet and flavoured with classic spices to really give you a taste of your childhood.
This Tasty mince pie recipe does contain alcohol and nuts but if you have a allergy or you don’t like alcohol you can substitute it with orange juice and it taste just as good without the nuts.

For The Filling:
175g currents
175g saltanas
175g raisins
175g dried cranberry’s
100g mixed peel
225g light muscovado sugar
1 tsp ground mixed spice
1 tsp Nutmeg
1/2 tsp cinnamon
1 lemon
1 apple
50g blanched almonds
125g unsalted butter
200ml brandy or Sherry or rum or orange juice
For The Pastry:
175g plain flour
75g unsalted butter
25g icing sugar
1 egg
1 orange
