Braised Fennel - Part 1
This video from the Vegetables Class teaches how to prepare and serve Braised Fennel.
Orange Braised Fennel
Orange Braised Fennel
serves 2-4
olive oil
2 fennel bulbs, tough core trimmed at bottom, cut into 6 wedges, green fronds reserved
sea salt
2-4 garlic cloves, smashed flat and peeled
chile flakes
1 1/2 cups fresh squeezed orange juice (from about 3 oranges)
1 tablespoon butter (I use Miyoko's)
Heat a large skillet over medium-high heat, add enough olive oil to coat the bottom. Add the fennel, sprinkle with salt and let the undersides brown for 2-3 minutes. Flip and let the other sides brown. Add the garlic and chile flakes to taste, swirl around for about 1 minute.
Add the orange juice and bring to a simmer. Let the orange juice reduce for 5 minutes at a gentle simmer. Cover the skillet and let simmer for 15-20 more minutes, until the fennel is soft throughout, and the sauce is thickened and glossy. Add the butter and swirl it in to melt. Taste for salt and adjust if needed. Enjoy the fennel warm, with the orange sauce spooned over top, garnished with the reserved fennel fronds.
