Ingredients:
3lbs of chicken breast
3 tablespoons of cornstarch
3 tablespoons grapeseed oil
1/2 cup apple juice
1/4 cup bourbon (Jim Bean)
1/2 cup hot water with 1 teaspoon beef bouillon
1/3 cup ketchup
1/3 cup soy sauce (low sodium)
1/2 cup brown sugar
2 tablespoons apple cider vinegar
1 teaspoon ginger (eyeball it!)
3-5 cloves garlic (based on preference)
Dashes of Salt & Pepper
2 cups farro
1 bag of stir fry mix
DIRECTIONS:
Before you begin cooking your chicken, turn your farro on either on the stove or in the instant pot since this takes the most time to cook!
Season 3lbs of chicken, cut into smaller pieces, with salt and pepper and one tablespoon of cornstarch and mix!
Heat a wok up with 2 tablespoons of grapeseed oil and once hot, toss in your chicken and cook until lightly browned on both sides.
Remove chicken from the wok and set aside.
Put your garlic into the hot wok pan with 1 tablespoon of grapeseed oil and cook until fragrant (1 ish minute). Add the remaining ingredients (apple juice, bourbon, water with beef bouillon, ketchup, soy sauce, brown sugar, apple cider vinegar, and ginger) to the wok and bring to a boil.
Once the sauce is boiling, add the chicken back into the wok and cook for 15 minutes or until the sauce is lessened by 1/2. Don’t let your chicken get overcooked, keep an eye on it!
While your chicken and sauce are cooking for 15 minutes, cook your stir fry with grapeseed oil and set aside
Once your farro is done cooking, drain the extra liquid and set aside!
Put your farro, stir fry and bourbon chicken together for the tastiest & easiest dish!
