How To make Boiled Fruit Cake

2 c Cold water
1 c Raisins
1/2 c Nuts; optional
1/2 c Figs
1 c Butter
2 ts Cinnamon
1 ts Cloves
1 ts Nutmeg
3 Eggs; well beaten
3 c Flour
2 ts Soda
1/4 ts Cream of tartar
Mix well and boil together for 10 minutes the first nine ingredients. Remove and let cool thoroughly; then all eggs, flour, soda, and cream of tartar. Bake in loaf pan 350~ for about one hour. -----

It is simple and involves only two steps! There is no need to soak the fruits ahead of time so if you did not have time to soak your fruits for this Christmas, then try out this easy fruit cake recipe and I'm sure you will be tempted to bake this every year!
Even though we don't soak the fruits ahead of time, boiling them in some butter, water and spices makes them plump and juicy, thereby making the cake intense and flavorful!

Rich Fruit Cake All Cooked In One Pan | Boiled Fruit Cake
I discovered this recipe in 2001, just over 20 years ago and then, thought it impossible to make a beautiful rich fruit cake in one saucepan. Many cakes on since then I can share this with you. You can use the same cream cheese icing that goes on the carrot cake, so I have included that in the ingredients list. I wish you all happy baking for lockdown.

2 cups of fruit cake mix (choose your own favourite blend)
1 cup of water
1 cup of sugar
250 grams butter
1 tsp mixed spice
1 tsp ground ginger
1 tsp of baking soda
2 cups self-raising flour
2 eggs well beaten (like an Aussie rugby team)
Cream cheese icing for top of cake
3 tbsp soft butter
1 1/2 cups of icing sugar
3/4 cup light cream cheese

The British Fruit Cake is traditionally served during the Christmas season. It is full of dried fruits and nuts, laced with alcohol over several weeks, and often covered with marzipan and royal icing. The problem is that it's both expensive to make and it needs time to age. Luckily, there is a much simpler version of this cake for the last minute baker, and I call it an Easy Fruit Cake. You may know it as a Boiled Fruit Cake, a War Cake, and/or a Bachelor's Cake. I love a lot of things about this cake. I love that it still uses all the necessary fruit cake ingredients, like dried and candied fruits and ground spices. I love that the batter is so easy to make and you don't need to pull out your stand mixer. And most importantly, I love its flavor and that it can be eaten almost right away. This is one cake that is so good that it begs to be made all year, not just during the Christmas season.
