1 1/2 c Brown sugar, packed
1/2 c Butter
1/2 c Shortening
6 ts Milk
1 ts Baking soda
1 ts Cinnamon
1 ts Cloves
1 ts Ginger
1 ts Allspice
1 c Raisins
3 c Oats
2 c Flour, all-purpose
2 Eggs; beaten
1 c Nuts
Cream shortening and sugar, add eggs. Sift dry ingredients together and add alternately with milk. Add oats raisins and nuts. Drop by spoonfuls on greased cookie sheets. Bake 12-15 min. at 350. -----

Ingredients
2 teaspoons pumpkin pie spice
1 teaspoon salt
1 teaspoon baking soda
1 ½ cups (186g) all-purpose flour
1 cup (226g) unsalted butter, softened
1 ½ cups (300g) packed brown sugar
2 large eggs
1 teaspoon vanilla extract
3 ¼ cups (260g) quick cooking oats
Instructions
Note: this dough needs to be chilled. Plan ahead!
In a medium bowl, whisk pumpkin spice, salt, baking soda, and flour. Set aside.
Cream butter and sugar in the bowl of a stand mixer fitted with the paddle attachment. (You can also use a large bowl and a hand mixer.) Cream until smooth, about 1-2 minutes. Mix in eggs, and vanilla and beat until smooth.
Gradually mix in dry ingredients until smooth, being careful not to over mix. Add oats and mix until all combined.
Scoop 2 tablespoon sized balls of dough and place on a cookie sheet lined with parchment or wax paper. Cover with plastic wrap and chill for at least 1 hour.
When ready to bake, preheat oven to 350°F. Line two cookie sheets with parchment paper or a silpat baking mat and place the cookie dough balls 2” apart.
Bake for 10-12 minutes, until the bottom is slightly golden. Cool on cookie sheets for 10 minutes, then remove to a rack to cool completely.
Store cookies in an airtight container for up to 4 days. They can also be frozen in an airtight container or ziploc bag for up to 2 months.

These vegan pumpkin spice sandwich cookies are a perfect sweet treat for the fall! The cookie part is light and fluffy like cake and the filling is creamy and rich! They are great for kids, adults, vegans and non-vegans alike!
Ingredients needed:
For the cookies (1 dozen cookies)
1/4 cup pumpkin puree
6 tbsps vegan butter, melted
1/3 cup white sugar
1.5 tablespoons molasses
1/4 cup brown sugar
1/4 tsp salt
3 tbsp aquavelva (also known as chickpea water, or the liquid in the can of chickpeas!)
1 tbsp plant based milk (soymilk or whatever you have available)
1 ¼ cups all purpose flour
1/2 teaspoon baking soda
2 tsp pumpkin spice
For the cream filling:
4 oz vegan cream cheese, softened
1/4 teaspoon vanilla extract
2 tablespoons vegan butter
1 tbsp pumpkin
1.5 cups powdered sugar, sifted

3 Cups All Purpose Flour
2 Teaspoons Cinnamon
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
4 Cups Old Fashion Oats
1 Cup Unsalted Butter
1 Cup Brown Sugar
1 Cup White Sugar
4 Whole Eggs
2 Cups Canned Pumpkin
Bake 35 - 40 minutes at 275 degrees Fahrenheit
How to make pumpkin oatmeal cookies. I love pumpkin and pumpkin season. I thought I would try something new for a party I was going to. So I pulled together this pumpkin oatmeal cookie recipe and it work out real well. These are a thick cake like oatmeal cookie with a hint of pumpkin. Nothing overpowering and not too sweet.
