Professional Baker Teaches You How To Make BLUEBERRY PANCAKES!
Anna makes a classic breakfast recipe. These light, fluffy blueberry pancakes will start your day right! Instructions below, makes 8 pancakes, or 4 servings.
INGREDIENTS
2 cups (150 g) all-purpose flour
¼ cup (50 g) granulated sugar
2 tsp (6 g) baking powder
½ tsp (2.5 g) baking soda
1 pinch salt
1 ¾ cups (450 mL) buttermilk
¼ cup (60 mL) vegetable oil
2 large eggs
1 tsp (5 mL) finely grated lemon zest
2 cups (250 g) fresh blueberries
Butter, for greasing the pan
Maple syrup, for serving
DIRECTIONS
1. In a large mixing bowl, sift the flour, sugar, baking powder, baking soda and salt. In a separate bowl, whisk the buttermilk, oil, eggs and lemon zest. Add this to the dry mixture and whisk just until blended, but a few lumps are still visible (this ensures you have not over-mixed the batter.)
2. Preheat a griddle over medium-high heat and lightly grease the pan. Drop ladles of batter onto the skillet, fitting in as many as the pan fits without crowding. Sprinkle blueberries on top of each pancake, letting them sink gently into the batter without pressing. Cook the pancakes for 3-4 minutes, until bubbles begin to appear and the pancakes looks matte at the edges. Flip the pancakes and cook another 2-3 minutes before removing to a place. Continue until all of the batter has been used.
3. Serve the pancakes immediately, with maple syrup.

Blueberry Cheesecake is a delicious baked dessert that is very easy to prepare, but very impressive. A cookie crumb base is topped with a rich mixture of cream cheese, lemon, cream and eggs. 375g of Cream Cheese (at room temperature)
200g Packet of Plain Sweet Cookies (I used Scotch Finger Biscuits)
80g of Butter
3/4 Cup of Whipping Cream (I used Thickened Cream)
3/4 Cup of Caster Sugar (aka Super Fine White Sugar)
1 Tablespoon of Grated Lemon Zest
2 Tablespoons of Lemon Juice
1 Teaspoon of Vanilla Extract
3 Eggs
1 1/2 Cups of Blueberries (plus extra for decorating)
2 Tablespoons of Icing Sugar (for dusting)
All measurements and temperatures are in Australian Metric.

These berry scones have just the right amount of sweetness, too, with just ¼ cup of sugar for the entire batch! They’re super easy to make so you can enjoy them even on a week day!
INGREDIENTS:

½ cup (120 g) sour cream

Christmas Crack :
Ingredients -
1 Cup of Butter
1 -12 oz Package of Chocolate Chips (you pick- semi sweet, milk or dark)
1 C of Brown Sugar
2 sleeves (give or take) of Saltine Crackers
Recipe:
Preheat Oven to 375
Line a cookie sheet with aluminum foil
Place Crackers just touching on cookie sheet
Fill in gaps with broken crackers
Melt butter in your pot
Add your brown sugar and stir, stir, stir
When your mixture comes to a boil, SET THE TIMER FOR 4 MINUTES
Stir, Stir, Stir and WATCH
After 4 minutes, pour the caramel over the saltines
Place in the oven for 5 minutes
Sprinkle chocolate chips evenly over the crackers
Let them sit for a minute or two until they look like they are soft and melting
Using a very clean and completely dry spatula, spread your chocolate chips over your crackers
Let cool for a few minutes
Place the cookie sheet in the freezer for 10 ish minutes
When the chocolate is completely hardened (not frozen) break your candy into small pieces
Place in a tupperware in the fridge
Give to people you LOVE or people who need a HUG.
