Blue Corn Pancake Recipe | How to Make Nutritious, DELICIOUS Blue Corn Pancakes
Hey Chile Heads! Today, we’re making some delicious Blue Corn Pancakes with Toasted Piñon. This recipe was inspired by Tia Sophia's Blue Corn Pancakes in Santa Fe, New Mexico. I have adapted it slightly to be packed with protein and fiber, but that did not stop them from being absolutely delectable. Try these for your next brunch, or just a lazy Sunday morning breakfast; I know you're gonna love it!

Blue Corn Pancakes with Pinon
Ingredients:
¾ cup blue corn meal, extra fine
½ cup boiling water
1 cup unbleached flour, or whole wheat flour
1 tablespoon ground flax
1 tablespoon protein powder
2 tablespoons sugar
2 teaspoons baking powder
½ teaspoon salt
1 cup plant based milk (you can also use regular milk)
2 tablespoons olive oil
1 large egg
¼ cup toasted pinon (pine nuts)
Maple syrup
Directions:
1. In a bowl whisk together all the dry ingredients, except for the blue corn meal.
2. Add blue corn meal to a small bowl with the boiling water. Let it set for a couple of minutes.
3. In a separate bowl whisk together milk, olive oil, and egg.
4. Add corn meal mixture to the dry ingredients, and then add to milk mixture. Don’t overmix, some lumps are ok. If the mixture is too think, add a little water to thin it out.
5. Spray some canola oil in a skillet, or griddle, and spoon a ¼ cup of batter onto the pan. Using your spatula, or spoon spread the batter into a round circle.
6. Cook until bubbles start to form on top, flip and cook on the other side until it is golden brown.
7. Transfer to a plate, and cover with aluminum foil until you are ready to serve them up.
Serve with warm maple syrup and top with toasted pinon (pine nuts).
(To toast the pine nuts, add them to a dry skillet on medium heat, and stir constantly for about 1 minute.)

Blue Cornmeal Mush

Corn or Mandammin in Anishinaabemowin has been grown and harvested by Native American Tribes long before the arrival of settlers. Mandaamin (corn) is an indigenous plant, cultivated in a variety of sizes and colors, and is often referred to as one of the “Three Sisters” as it is planted alongside of beans and squash. If you have never tried blue corn mush, it may be described as a hot porridge that can be eaten sweet or savory. You can change up the flavors of blue corn mush based on what you add to it. This recipe for blue corn mush (made by grounding whole blue corn) includes the addition of a soft boiled egg for extra protein and flavor.
Joe’s Blue Cornmeal Mush Recipe – serves 2 to 4

Ingredients*
1-2 soft-boiled eggs per serving
1 ½ cups water
1 cup blue cornmeal
¾ to 1 cup 1% milk
¼ teaspoon salt, or more as needed to taste
1 Tablespoon butter
¼ cup maple sugar
Walnuts and pecans
Instructions for Soft-Boiled Eggs
1. Wash your hands before preparing food.
2. Bring about 2 inches of water to a boil in a small saucepan.
3. Gently place eggs into boiling water and boil for 6 ½ minutes.
4. Rinse eggs under cold water until able to handle easily with bare hands.
5. Peel eggs and set aside.
Instructions for Mush
1. In a large, heavy bottomed saucepan, bring 1 ½ cups water to a boil.
2. Mix milk and salt in a small bowl, slowly stir in the cornmeal until smooth.
3. Slowly pour the cornmeal/milk mixture into the boiling water, stirring constantly.
4. Bring mixture to a boil again, then reduce heat and stir almost constantly to avoid scorching for about 15 minutes, or until the mixture is thickened to the consistency that you like.
5. Stir in butter and maple sugar. Divide into bowls and top each with nuts and soft-boiled egg(s).
Notes and Ideas:
- FDPIR dried cherries, or dried plums or applesauce and a sprinkle of cinnamon would also be delicious additions
- Try the FDPIR dried fruit and nut mix in place of pecans and walnuts
- An additional drizzle of maple syrup might be tasty.
- A delicious addition would be 1 teaspoon of cedar ash.
