2 c All-purpose flour; sifted 1 ts Baking soda 1/4 ts Salt 1/2 c Chunky style peanut butter 1/2 c Unsalted butter; softened 1/2 c Light brown sugar; firm pack 1/4 c Sugar 1 lg Egg 1 ts Vanilla extract 1/4 c Milk 3/4 c Semi-sweet chocolate chips 3/4 c Honey roasted peanuts 3/4 c Mini peanut butter cups (freeze then chop coarsely) Preheat the oven to 375~. Combine the flour, baking soda and salt; set aside. Beat the peanut butter and butter together until fluffy. Add both of the sugars and beat until light and smooth. Then add the egg and beat for three minutes. Add the vanilla and mix well. Stir in the flour mixture and beat thoroughly. Sprinkle the milk over the mixture and beat to soften the dough. Fold in the chocolate chips and peanuts, then carefully add the candy. Drop by two tablespoon clumps onto an ungreased baking sheet, leaving about 1" spaces for spreading. Bake for 10-12 minutes, or until just brown. Makes about 30. -----

Almond Cream is a versatile staple in the pastry kitchen. I'm going to show you the steps in preparing this simple and versatile recipe. It is made with equal parts of sugar, butter, almonds, and eggs with a bit of flour or cornstarch as well. It is used for a multitude of pastry and dessert applications such as croissants aux amandes and in making Crème Frangipane. It is also used to fill galette des rois, pithiviers and frangipane tarts. Note: Almond cream cannot be consumed raw. It is meant to be baked.
