500ml /1.05 pint milk
4 eggs
170gram / 5.99oz. flour
350gram /12.34oz. cottage cheese
1/4 teaspoon salt
3 tablespoons of sugar
1 teaspoon vanilla sugar
2 tablespoons vegetable oil (for dough)
2 tablespoons of sour cream

A Little Nosh: Shavuot Blintzes Recipe

Ingredients
Batter Ingredients
1 cup Flour
1 tbsp Sugar
1 tsp Vanilla Extract
2 Eggs
1 cup Milk
1oz Melted Butter
1/4 tsp Salt Oil for pan
Filling Ingredients
17oz Ricotta Cheese
3.5oz Raisins
3.1oz Sugar Dash of Cinnamon
Directions
Mix all of the filling ingredients, cover with a plastic wrap and let sit in the refridgerator for 30 minutes.
Mix together ingredients for the batter – eggs, sugar, vanilla, butter and milk.
Add the flour and salt and mix until you get a uniform texture. (No lumps!)
Heat a pan over medium heat with a small amount of oil. Place about 2-4 tbsp of batter in your pan, and shape to the size of the pan with either a utensil or by holding the pan and gently tipping it to let the batter cover the bottom.
Cook your blintzes for about 2 minutes on each side or until golden brown.
Add your filling, roll your blintzes and enjoy!

This family tradition started about 15 year ago when Steve had this wild idea to make cheese blintzes for a special Christmas family breakfast. He pulled out our Good Housekeeping Illustrated Cookbook, modified the recipe for our large crew, added a twist of his own creation and whipped up a batch of crepes and filling . . . the rest is history.
On that Christmas Eve he created a tradition that has endured and is always anticipated. And even now that our kids are grown, they still come back home looking forward to our Christmas morning tradition of cheese blintzes topped with fresh fruit.
It takes about 2 hours to make the crepes and the filling. Steve usually does this on Christmas Eve day and puts the crepes and filling in the refrigerator until Christmas morning.

Bruce demonstrates traditional Jewish stuffed pancakes. The batter is similar to that of a crepe, and the thin pancakes cook up in a matter of seconds. Each crepe is filled with an ample amount of farmers' cheese, cottage cheese, cream cheese, sugar and vanilla, then cooked to a golden-brown. Blintzes are traditionally served with sour cream, but are also excellent topped with home-made apple sauce. So good!
