Blueberry Muffins with Stresel Crumb Topping Recipe
Yield: 12 muffins
Ingredients:
For the Muffins:
7.5 oz all purpose flour (1.5 cups)
3/4 cup sugar
2 tsp baking powder
1/4 tsp salt
Zest of 1 orange
1/3 cup grapeseed oil (or other neutral oil like canola, vegetable, etc)
1 extra large egg
1/3 cup milk
2 cups fresh or frozen blueberries
For the Streusel Crumb Topping:
3/4 cup sugar
3/4 cup flour
1 tsp cinnamon
6 tbsp cold butter, diced
2 tbsp milk
Directions:
Preheat the oven to 400 degrees F. Line a muffin tin with paper liners.
In the meantime, make the streusel crumb topping. Whisk to combine the sugar, flour, and cinnamon, then add the cold butter. Work all of the ingredients together with your fingertips, until it forms a bunch of crumbs and clumps. Add the milk and stir to distribute the liquid. Chill in the fridge until ready for use.
Back to the muffins: Whisk to combine the flour, sugar, salt, baking powder and orange zest. Take 2 tablespoons of the mixture and toss it with the blueberries. This ensures that the blueberries don't fall to the bottom of the muffins.
Place the oil, egg, and milk in a bowl, and whisk to combine. Add that to the flour mixture, and stir until almost combined.
Dump in the blueberries, and fold them in gently. Use a cookie scoop to portion them out into the muffin cups, and sprinkle the crumb topping all over the tops. Bake for 20-25 minutes until a toothpick inserted into the center comes out with no wet batter. Let them cool, and enjoy!

Breakfast Crepes Recipe / Cheese Blintzes Recipe/ Easy, DIY Breakfast Crepes/ Blintzes & Crepes
We make deliciously, sweet and soft cheese blintzes every year for our Christmas morning tradition. Over the years we've perfected the recipe to get great results and fantastic flavor every time!
Get the Recipe here:
This family tradition started about 15 year ago when Steve had this wild idea to make cheese blintzes for a special Christmas family breakfast. He pulled out our Good Housekeeping Illustrated Cookbook, modified the recipe for our large crew, added a twist of his own creation and whipped up a batch of crepes and filling . . . the rest is history.
On that Christmas Eve he created a tradition that has endured and is always anticipated. And even now that our kids are grown, they still come back home looking forward to our Christmas morning tradition of cheese blintzes topped with fresh fruit.
It takes about 2 hours to make the crepes and the filling. Steve usually does this on Christmas Eve day and puts the crepes and filling in the refrigerator until Christmas morning.
