How To make Blackberry Shrub
2 qt Ripe berries
2 c Sugar (or more)
2/3 c Lemon juice
1 qt Club soda
1 pt Tart sherbet (opt)
Crush berries with sugar, cover and let stand overnight. Press through a cheesecloth lined sieve, extracting as much juice as possible. Mix in lemon juice. Taste for sweetness - if too tart, add sugar, stirring until dissolved. Pour into bottle, cover and refrigerate. Serve as is on the rocks in punch cups or small glasses. OR, half fill a tall glass with shrub, add ice, and fill with club soda. OR, pour into punch cups and top each serving with a scoop of tart sherbet. From: Terri St.Louis

Today we are continuing our efforts to make space in the freezer and fill our pantry shelves by preserving 4 gallons of frozen blackberries. We make two water bath canning recipes including Blackberry Pie Filling and Blackberry Lemonade Concentrate. We also make Blackberry Shrub.
Blackberry Pie Filling Recipe:
Blackberry Lemonade Concentrate Recipe, adapted from Strawberry Lemonade Concentrate:
Shrub Recipe:
1/2 gallon jar filled with fruit of choice
1 cup cane sugar, honey, or pure maple syrup
Apple cider vinegar to top
Stir ingredients together and let sit for 2-3 weeks on the counter, shaking daily. Strain off fruit and store shrub in the fridge. Add a few tablespoons to sparkling water for a healthy kombucha-like beverage.

How To Make A Blackberry Basil Shrub
LeGourmetTV Is Now Glen & Friends Cooking!
Ah the shrub… also known as a drinking vinegar. Don’t let the name scare you away - this sweet, sour, fruit infused syrup is refreshing when mixed with soda water and killer when used in cocktails.
It takes a little time, but it’s well worth it.
Ingredients:
1/3 cup (75 mL) blackberries
2/3 cup (150 mL) sugar
6 – 8 large basil leaves
1/3 cup (75 mL) Raw unpasturised apple cider vinegar
1/3 cup (75 mL)Raw unpasturised balsamic vinegar
Method:
In a 1.5L wide mouth Mason jar; muddle blackberries and sugar.
Slap the Basil to release it's oils and add to the jug (don't muddle the basil, it will become bitter).
Add the two vinegars, and shake the jug to combine (out the lid on obviously...)
Allow the mixture to sit at room temperature for 5 to 7 days, shaking it daily. Strain the mixture with a fine mesh sieve and store in the refrigerator.
Can be stored for 3-4 months; but you'll use it long before then.

Blackberry Basil Rum Shrub Collins - Glen And Friends Cocktails After Dark
Shrub, the sweet-tart syrup favoured by colonial Americans, is simply made by macerating fruit in sugar until the fruit exudes its juice, straining, then adding vinegar. Mixed with rum and soda, it makes a bracing drink, ideal for summer afternoons.
Our recipe for Blackberry Basil Shrub:
Ingredients:
2 oz dark rum
1 oz shrub syrup
Club soda
Method:
Combine rum and syrup in an ice-filled Collins glass.
Top with club soda and stir gently to combine.
