How To make Black Bean Chili with Oranges
2 lg Onions, chopped
2 Cloves garlic, pressed or
-minced 1 T Salad oil
2 qt Regular-strength chicken
-broth 1 lb Dried black beans, sorted
-for debris and rinsed 1 T Coriander seed
1 t Whole allspice
1 t Dried oregano leaves
3/4 t Crushed dried hot red
-chilies 6 Cardamom pods, hulls remove
-(1/4 tsp seed). 2 1/2 lb Oranges for zest, juice,
-slices Combine in onions, garlic, and oil in a lidded 6 quart sauce pan, over high heat. Stir often until onions are tinged with brown, about 8 minutes. Add remaining ingredients, but not zest, juice, or slices, to onions, etc., and bring to a boil over high heat. Reduce heat to simmer. Cover and simmer until beans are tender to bite, about 1 1/2 to 2 hours. While beans simmer, remove 2 teaspoons zest, squeeze 1/2 cup juice, remove peel and white membrane from rest of fruit and slice thinly crosswise, removing seeds. After the beans become tender, raise heat to high, uncover, and boil until most of the liquid evaporates, about 10 - 15 minutes. (Reduce the heat and stir occasionally as mixture thickens.) Remove beans from heat and stir in 1 tsp zest and the 1/2 C juice. Ladle beans into serving bowls. Place the sliced fruit equally on top of the beans in each bowl. Add to taste: sour cream, fresh cilantro sprigs, salt. Garnish with the remaining 1 tsp zest.

3 lbs ground beef, drained
1/2 cup red wine vinegar
One Large Bell Pepper finely diced
One Onion finely diced. Both sautéed until soft, Salting vegetables
1 30 oz. can Chili Beans
2 Cans diced tomatoes
1 can drained Kidney Beans
About 32 oz. Tomato Juice
Carroll Shelby Chili Kit (contains chili pepper, cumin, garlic and other spices)
Use the cayenne pepper packet if you like your chili hotter. The masa flour packet is to thicken your chili. All personal preferences.

Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.

Corn & Black Bean Chili
Brown/cook 2 lbs of ground beef chop up for crock pot
Add:
2 cans condensed tomato soup
2 cans diced tomatoes
2 cans black beans
2 peppers (diced)
2 onions (diced)
1 head chopped garlic
Cook in crock pot 4 hrs on high or 8 hrs on low
During last half hour of cooking, add in the seasonings
- chili powder approx 1/2 cup
- garlic powder approx 1/2 cup
- onion powder approx 1/2 cup
- cayan pepper approx 1/4 cup
Shut off the crock pot at end of the cooking ans add in 2 lbs frozen corn
Let sit for 1 hr before serving

INGREDIENTS:
1 large yellow onion, diced small
4 cloves garlic, minced
2 teaspoons cumin seeds, toasted and ground
2 chiles in adobo sauce, minced, or 2 teaspoons ancho chile powder
Zest and juice of 2 oranges
2 (15-ounce) cans black beans, drained and rinsed (about 3 cups)
Sea salt
18 corn tortillas
1½ cups Spiked Sour Cream
1 jar salsa
DIRECTIONS:
-Sauté the onions in a saucepan over medium heat for 8 to 10 minutes. Add water 1 to 2 tablespoons at a time, to keep them from sticking. Add the garlic and cook for another minute. Add the cumin, chiles in adobo sauce, orange zest and juice, and black beans.
-Season with salt to taste, and purée the mixture in a food processor until smooth but still a little chunky.
-Place the tortillas, a few at a time, in a nonstick skillet over medium-low heat. Heat until softened, 3 to 4 minutes. Stack the warmed tortillas and wrap them in a piece of foil.
-Spread 3 tablespoons of the black bean mixture over half of each tortilla, then roll up the tortilla and set it aside. Repeat with the remaining tortillas, then place all of the taquitos into a large nonstick skillet and heat over medium-low heat for 3 to 4 minutes.
-Serve with the Spiked Sour Cream and salsa.

Spicy Sweet Potato Black Bean and Beef Chili Recipe
INGREDIENTS:
1 to 1 1/2 pounds ground beef
1 cup diced onions
3/4 cup diced bell pepper
2 cups diced sweet potatoes
1 cup rinsed and drained black beans
1 - 20oz can crushed tomatoes
1 to 2 cups chicken broth
4-5 cloves minced garlic
1-2 tbsp. chipotle adobo sauce - or red pepper flakes / cayenne pepper
1 tbsp. chili powder
1 tsp. oregano
1 tsp. cumin
1 tsp. smoked paprika
salt and black pepper
Garnish: shredded cheddar cheese, chopped green onions, sour cream
In a pan on medium heat, add ground beef.
Cook and chop into small pieces. Drain ground beef if needed.
Add dice onion and bell peppers. Stir. Add salt, black pepper and minced garlic.
Cook and stir for a couple minutes.
Add broth and crushed tomatoes. Turn up heat to bring to simmer.
Add spices. Stir and simmer for 10 minutes.
Add diced sweet potatoes. Stir. Simmer for 10 minutes.
Add black beans. Stir. Taste for seasonings. Add more broth if needed.
Simmer for 10-15 minutes or until sweet potatoes are tender.
Enjoy.
