2SP CAKE MIX COOKIES! - MY WW RECIPE - GROCERY HAUL
Hey Friends! I’m back with another grocery haul and the cake mix cookies! The recipe is down below! Hope you enjoy :)

Cake Mix Cookies:
Ingredients-
1 Box of Cake Mix
1/3 Cup Unsweetened Applesauce
2 eggs
1/3 Cup White Chocolate Chips (optional)
Directions-
Preheat Oven to 350
Mix together cake mix, applesauce, and eggs
Mix in Chocolate Chips
Spoon onto Cookie Sheet (should make 40 cookies)
Bake for 10 minutes
Let cool for 1-2 minutes, then transfer to cooling rack
Store in an air tight container

The WORST cookie recipe EVER - 1943 Canadian Wartime Recipe
Generally, I love any type of oatmeal cookie... with raisins, chocolate chips, cranberries, etc... HOWEVER.... I have finally met a cookie that I don't like. I even checked to make sure my shortening wasn't rancid!! (It was brand new)
Don't get me wrong, the texture wasn't bad.. the corn syrup did make it fairly chewy. But holy moly the flavor was somethin' else - and not in a good way. I am not sure if taking the time to alter this recipe would be worth it... honestly I think I'll just stick with my tried and true version that includes butter and vanilla and all the rest of the good stuff.
Now I know that wartime versions of things were made to be economical and that ingredients were hard to come by sometimes, but I think I would have rather just had the filling on a spoon rather than waste it on a poor excuse for a cookie sandwich.
Oh well.. you live, you learn!

WW2 Food Rationing Cake Recipe from 1943! No White Sugar! (Honey Spice Cake from Swan's Down Flour)
I found a little pamphlet on Ebay published in 1943 by the makers of Swan's Down. It's full of recipes specifically made to help conserve ingredients that were rationed during the war years! I had a hard time choosing the recipe but finally settled on the Honey Spice Cake. Can a cake with no sugar still taste good?! :)
Here's what you'll need for the cake:
2 c Swan's Down Flour- if you can't find it, make sure you sift the regular flour
2 tsp Baking Powder
3/4 tsp Salt
1 1/2 tsp Allspice
1/2 c Shortening
1 tsp Lemon Peel, grated
3/4 c Honey
2 Egg Yolks, unbeaten
1/2 c Milk
2/3 c Chopped Raisins
1 tsp Vanilla
2 Egg Whites
1/3 c Chopped Walnuts
Sift flour once, measure, add baking powder, salt and allspice. Sift together 3 times. Cream shortening and lemon peel. Add honey gradually, beating well. Add 1/4 of flour and beat until smooth. Add egg yolks, one at a time, beating each well. Add remaining flour in thirds, alternately with milk in halves. Add raisins with last remaining flour. Add vanilla. In a separate bowl, beat egg whites until stiff enough to hold moist peaks. Stir quickly but thoroughly into batter. Pour into greased 8x8 pan and sprinkle with chopped nuts. Bake in 350 degree oven for about 55 minutes or until done.

Ingredients:
~1 cup all purpose flours
~1/2 cupGreek yogurt unsweetened, unflavoured - drained
~1 1/2 tsp baking powder
~1/2 tsp salt
~1 tsp instant yeast
~1 egg
~Cooking spray of your choice
Instructions:
Pre-Heat oven to 375
1. Mix flour, salt, baking powder yeast in a bowl
2. Add drained yogurt and egg
3. Mix well but don't over mix
4. Once it comes together divide into 4 equal parts
5. Place on parchment paper sprayed with cooking spray and spray tops with cooking spray
6. Bake about 15 minutes until golden
7. ENJOY :)

Food rationing was a must. The military got the best meat, coffee, and nonperishables, while everyone else tightened their belts and made do. Instead of grumbling about it, people got creative.
