1 lg Coconut 8 tb Flour 4 Egg yolks 1 c Brown sugar 1/4 ts Salt 4 tb Butter 1/2 ts Vanilla Cut the coconut open and grind coconut without peeling. Measure 3 cups of ground coconut and add the remaining ingredients. Mix well. Grease a 13x9x2-inch baking dish. Pinch off pieces of dough and form into balls. Place in the baking dish and bake in a pre-heated 350 degree oven until golden, about 35 minutes. Makes about 24 macaroons. -----

Coconut Macaroons/Besitos De Coco Ingredients: One 14 oz bag of sweetened coconut flakes 7/8 cup sweetened condensed milk (which equals to 3/4 cup plus 2 tbsp) 1 tsp vanilla extract 2 large egg whites 1/4 tsp salt (optional) 4 oz or so of semi sweet chocolate
In a medium bowl mix coconut flakes, sweetened condensed milk and vanilla extract, then set aside. In a separate bowl add the 2 large egg whites and salt, beat until fluffy like a cloud. Fold in the egg whites into the bowl with the coconut flakes, condensed milk and vanilla extract. Mix until well combined.
Preheat oven to 325 degrees Fahrenheit. Line a baking sheet with parchment paper (NOT wax paper, the macaroons will stick). Scoop out tablespoons of the mixture using a ice cream scoop or cookie scoop, making nice mounds, put on baking sheet about 1in apart from each other. Bake in the oven for 23-25 min or until edges and tops are golden.
(Optional) Put chocolate into bowl and microwave in 30 sec intervals and mix each time until chocolate is melted. Let the macaroons cool for a couple of minutes after you pull them out of the oven and before dipping into the chocolate. Dip into chocolate and scrape off any excess and place back on baking sheet with parchment paper and let cool in fridge for 10-15 min so chocolate can set, then serve and enjoy! Buen provecho!

Instructions: 1. Pre- heat the oven to 350*F 2. Grease a cookie sheet or use parchment paper or the silicone mat. 3. In a large bowl combine all ingredients and mix well until a sticky dough forms. 4. Make 24 uniform balls and place them on the baking sheet. 5. Bake for 20-25 minutes or until golden brown. 6. Allow to cool for 10 minutes before serving.
