LAY HO MA! This dish is a popular one indeed and for good reason! It’s visually stunning and really delicious. Join me in this episode and learn how to make an easy but tasty Chinese style chow fun recipe. Let’s begin!
Ingredients:
2 pieces garlic
small piece ginger
60g broccolini
2 sticks green onion
1 king oyster mushroom
1/4lb extra firm tofu
1/2 onion
120g flat rice noodles
1/2 tbsp potato starch
1/4 cup water
1 tbsp rice vinegar
2 tbsp soy sauce
1/2 tbsp dark soy sauce
1 tbsp hoisin sauce
drizzle of avocado oil
salt and pepper
2 tbsp chili oil (
1/2 cup bean sprouts
Directions:
1. Bring a pot of water to boil for the noodles
2. Finely chop the garlic and ginger. Chop the broccolini and green onions into bite sized pieces. Roughly slice the king oyster mushroom. Pat dry the extra firm tofu with a paper towel, then thinly slice. Slice the onion
3. Cook the noodles for half the time to package instructions (in this case, 3min). Stir the noodles occasionally to keep them from sticking
4. Strain out the noodles and set them aside
5. Make a slurry by combining the potato starch and 1/4 cup water. Then, add the rice vinegar, soy sauce, dark soy sauce, and hoisin sauce. Give the sauce a good stir
6. Heat up a nonstick pan to medium heat. Add a drizzle of avocado oil
7. Sear the tofu for 2-3min on each side. Season the tofu with a bit of salt and pepper. Set the tofu aside
8. Place the pan back onto medium heat. Add in the chili oil
9. Add and sauté the onions, garlic, and ginger for 2-3min
10. Add and sauté the broccolini and green onions for 1-2min
11. Add and sauté the king oyster mushrooms for 1-2min
12. Add the noodles followed by the sauce. Add the bean sprouts and sauté for another minute
13. Add back in the tofu and give the pan a good stir

Beef Chow Fun Recipe:
1/2 lb L size rice noodles
1/2 lb shaved beef (from trader joes)
2 teaspoons soy sauce
1 tablespoon oyster sauce
1 teaspoon cornstarch
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon thick soy sauce
1 teaspoon sugar
1/2 teaspoon black pepper powder
1 tablespoon water
a handful of bean sprouts
3 stalks green onions split between white and green
1 teaspoon ginger, minced
4 garlic cloves, minced
In a bowl, marinate the shaved beef or sliced sirloin with 2 teaspoons soy sauce, 1 tablespoon oyster sauce, and cornstarch. Marinate for 30 minutes.
In another bowl, mix remaining soy sauce, oyster sauce, thick soy sauce, sugar, black pepper powder, water and mix well. Set aside.
Prep the noodles if boiling from dried or cut from fresh. Drain and set aside if you're cooking from dried.
In a smoking hot wok, add oil and let stir fry the meat for a few minutes just until it's done. Let it sit for a minute until you touch it so it develops a nice crust. Remove from wok into a bowl and set aside.
Let the wok get hot again and add a little more oil. Add the white part of the green onions along with ginger and garlic and stir fry for a quick minute until fragrant. Add the noodles and stir fry with the sauce. Add a handful of bean sprouts, green onions and beef. Stir fry again for another minute and you're done!

????Below is a single serve recipe. And as I mentioned if you have a small wok with low heat output this is the right recipe for you. If you have a wok at least 13inches and your gas range has a decent fire output then go ahead and double the portions for two servings.
???? If all you have is a fry pan then the principles you've learned here still apply.
►Ingredients:
250g (9oz) Hor Fun (Flat Rice Noodles)
50g (1.5oz) Bean Sprouts
1 Stalk Spring Onions or Chinese Chives
1/4 Medium Size Yellow Onion
►Beef and Marinade:
100g (3.5oz) Flank Steak
1/2 Tablespoon Light Soy Sauce
1 Teaspoon Chinese Cooking Wine
1/2 Teaspoon Pure Sesame Oil
1/4 Teaspoon Ground White Pepper
2 Teaspoons Water
1/4 Teaspoon Baking Soda
1 Tablespoon Oil
►The Sauce:
1 Tablespoon Light Soy Sauce
1/2 Tablespoon Dark Soy Sauce
1 Tablespoon Oyster Sauce
►Cooking Instructions:
Slice beef into strips. Marinade first by adding everything except tablespoon of oil. After massaging the beef for a few minutes then add oil and toss around a few times to mix completely.
Add sauce mix into a bowl, stir and set aside.
Cut onions into strips and the spring onions.
Heat wok on medium high. When you see smoke add 2 tablespoons of oil. Then add the beef to the wok and put a good sear on both sides of the beef. You want to cook beef until around 75% done. Remove beef and set aside.
Add another tablespoon or two (or even three) of oil and drop the onions in. When onions start turning clear add hor fun noodles.
Switch on the HIGH HEAT, as high as it will go. Keep moving the noodles around until you see visible charring. Quickly add the sauce and continue mixing until all the noodles are coated. Then add the beef back in followed quickly with the bean sprouts.
Mix those and continue moving around to coat all ingredients with sauce. That should take about a minute or so. Flip heat off and add spring onions and mix around for another 30 seconds.
