1/4 ea Tomato, green (1/4 peck) 1/4 ea String beans (1/4 peck) 3 c Lima beans 3 c Corn 5 ea Bell pepper, green 1 qt Onion 1 ea Cauliflower, large head 2 c Sugar 3 qt Cider vinegar 1/2 c Salt 2 T Celery seed 2 T Mustard seed 1/2 lb Mustard, dry 1 T Turmeric Cut the string beans in pieces; break the cauliflower into flowerets, add the lima beans and corn and cook all four ingredients about 25 minutes. Chop the onions, peppers, and tomatoes. Heat the vinegar and when hot, add the sugar, salt and spices which have been mixed together. Drain the water from the cooked vegetables and add to the hot vinegar. Then add the chopped vegetables and cook about 25 minutes, stirring constantly. Pour into sterilized jars and seal. Ingredients Oil - 1 tbsp Mustard seeds - 1/2 tsp Urad dal - 2 tsp Cumin seeds - 1/4 tsp Curry leaves - 1 sprig Dry red chili - 1 Chayote - 4 cups chopped Salt - to taste Water - 1/2 cup Turmeric powder - 1/4 tsp Pepper powder - 1/4 tsp Red chilli powder - to taste Peanuts/groundnuts - 1/2 cup (roasted) Jaggery - 1 tsp (optional) Coriander leaves/cilantro - 1/2 cup chopped
1. Roast peanuts/groundnuts. When cool, make a powder and set aside. 2. In a heavy bottomed pan, heat oil on medium heat. Add mustard seeds, urad dal, dry red chilli. When mustard seeds splutter, add cumin seeds. Then add curry leaves. 3. Add in chopped chayote squash/chow chow. 4. Add 1/2 cup water, salt, turmeric, pepper, red chili powders. Cover and cook. 5. Once cooked, add peanut powder, cilantro/coriander leaves. Add jaggery if needed. Mix well. 6. Serve with rice/roti.
