Why Restaurant Quinoa Is So Much Better

1.5 cups of quinoa
1.75 cups water for instant pot or a rice cooker (2 cups of water for a regular pot)
2 tsp Diamond Crystal Kosher (or 1 tsp table salt)
Put quinoa into a pot you plan to use to cook it and cover with lots of cold water (this is not the measured water). Agitate with your hand and drain well through a fine mesh sieve. Repeat until the water is no longer soapy looking. Return quinoa to the pot and add the right amount of water for your kind of pot. Add the salt.
Instant pot or rice cooker: Seal the pot. Press the Rice button. Turn off “Keep Warm”. Let the cycle run and wait for the pressure to drop naturally. I set my timer for 1 hour after pressing the Rice button to make sure my quinoa is thoroughly rested.
Regular pot: Set over high heat and bring to a boil uncovered. Reduce heat to low, cover and cook for 20 min. Take off heat. Don’t uncover. Let rest for 20 min.
Fluffing quinoa:
Rake the quinoa with a fork gently starting with the top layer and gradually working your way down. If you encounter any sticking. Cover quinoa with a paper towel and let it cool an extra 15-30 minutes. Then continue to gently rake with a fork until all the grains separate.
Storing quinoa:
Cool quinoa completely and store in an airtight container in the fridge for up to a week or freeze. Use in salads cold or rewarm in a pan on moderate heat with some butter or olive oil.
Crispy quinoa:
Cook, cool, and fluff quinoa as described above. Put just enough quinoa into a cast iron or non-stick skillet to create a very thin layer (a 12 inch skillet holds 150g of cooked quinoa comfortably). Add 1 tsp olive oil and rub into quinoa with your hands to help separate the grains. Set over moderate heat and cook until quinoa starts to steam. Once you see steam, you have to stir very often (roughly every minute). For the first 10 minutes, you shouldn’t see any color. Somewhere between 10 and 20 minute mark your quinoa should start to brown. Cook until it feels completely dry, crispy, and brown. Cool completely and store in an airtight container at room temperature for up to a month.
Before serving, toss with the seasoning of your choice. It’s good to include something acidic (lemon juice, lime juice, pomegranate molasses, or some vinegar), something aromatic (za’atar, smoked paprika, etc), olive oil, and salt.

5-6 bell peppers medium to large
2 tablespoons olive oil
½ large yellow onion chopped
3 garlic cloves minced
1¼ pounds lean ground beef
1 can diced tomatoes (14.5 oz)
1 can tomato sauce (8-ounce)
1½ cups cooked rice
¼ cup finely chopped fresh parsley plus more to garnish
1 tablespoon Italian seasoning
1 teaspoon salt
½ teaspoon ground black pepper
1½ cups shredded mozzarella cheese
1. Preheat the oven to 350°F.
2. Cut the bell peppers in half remove seeds and ribs but leave the stem from. Stand the peppers up inside a large casserole dish.
3. In a large skillet, heat the olive oil over medium heat. Add the onion and cook, stirring occasionally, until tender and browning around the edges, about 8 to 10 minutes. Stir in the garlic and cook 2 minutes more.
4. Add ground beef and cook until browned, about 10 minutes, stirring and breaking up any chunks with the back of a spoon while cooking.
Stir in the diced tomatoes, tomato sauce, cooked rice, parsley, Italian seasoning, salt, and pepper. Cook, stirring occasionally, until the mixture is heated through, about 3 minutes. Remove from the heat.
Fold in 1 cup mozzarella cheese.
5. Spoon the filling into the peppers
Sprinkle the filling with the remaining 1/2 cup cheese.
6. Bake for 20 minutes or until the peppers are tender and the cheese is starting to brown. Let cool for about 5 minutes before serving.
Garnish with fresh parsley, if desired.

Ingredients:
2 tablespoons Oil
1 Onion, chopped
2 Garlic cloves, minced
1 lb. (450g) Ground beef
1 teaspoon Paprika
1 teaspoon Oregano
1 teaspoon Cumin
1/2 teaspoon Red chili flakes (optional)
Salt to taste
Pepper to taste
2 tablespoons Tomato paste
1/4 cup (60ml) beef stock/water
4-5 Flour tortillas
2 tablespoons Cooked Rice per tortilla
Corn
Beans
Lettuce, chopped
Tomato, chopped
Cheese of your choice
Directions:
1. Make the meat mixture: in a large pan, heat 2 tablespoons of oil over medium heat. Add chopped onion and sauté until golden, about 5-6 minutes. Add minced garlic and cook for one minute. Turn the heat to high, add ground beef and cook, breaking it apart until no longer pink, about 5 minutes. Add the spices, tomato paste and mix well. Add beef stock/water and cook for 3-4 minutes. Remove from heat and set aside.
2. Assembly: place the tortilla on a clean working surface, first layer 2 tablespoons of rice, then 3-4 tablespoons of the meat mixture, then 1-2 teaspoons of corn, 1-2 teaspoons of beans, chopped lettuce, chopped tomato and grated cheese of your choice. Fold the sides of the tortilla and roll as shown in the video.
3. Toast the burritos in a dry pan over high from all sides until golden.
4. Serve and enjoy!

▶️ RECIPE INGREDIENTS: (Servings 4 to 5 servings)
???? To Cook Quinoa:
1+1/2 Tablespoon Olive Oil
1 Tablespoon Garlic - finely chopped
1/2 Cup / 125ml Tomato puree or Passata/Strained tomatoes
1 Cup / 190g Quinoa (I have used tri-colour quinoa)
1+1/3 Cup / 325ml Water OR as required
1+1/2 Cup / 200g Frozen Corn
???? Other Ingredients:
1 Cup / 150g Red Bell Pepper - cut into 1/2 X 1/2 inch pieces
3/4 Cup / 140g Cherry/Grape Tomatoes - cut in half
1/2 Cup / 65g Red Onion - chopped
1/2 Cup / 30g Green Onion - chopped
1/2 Cup / 15g Cilantro (Coriander leaves) - chopped
1+1/2 Cup / 250g / 398ml Can - Cooked Black Beans (Rinsed/Drained well)
???? SALAD DRESSING:
3 Tablespoon Lemon Juice OR to taste
1 Tablespoon Olive Oil (I have added Organic Cold Pressed Olive Oil)
2 Tablespoon Maple syrup OR to taste
1 Teaspoon Ground Cumin
1/2 Teaspoon Ground Black Pepper
Salt to Taste (I have added 1+1/8 teaspoon of pink Himalayan salt)
(For extra heat you could add 1/8 to 1/4 teaspoon of Cayenne pepper)
OPTIONAL - Top with Avocado
▶️ METHOD:
Start by chopping the vegetables and set it aside. Thoroughly rinse the quinoa until the water runs clear and set aside. Also, rinse the cooked black beans thoroughly in a strainer and set it aside to drain any excess water.
To a heated pan add olive oil, garlic, chili flakes and fry on medium-low heat until the garlic start's to sizzle. Be careful not to burn the garlic. Add the tomato puree/passata and cook on medium to medium-low heat for another 1 to 2 minutes to cook out the raw flavour of the puree.
Add the rinsed quinoa, water and mix well. Add the frozed corn and bring to a boil. Cover the lid and reduce the heat to low. Cook for about 20 minutes or until the quinoa is cooked. Don’t let the quinoa get mushy.
As soon as the quinoa is cooked, transfer it to a large mixing bowl. Spread it our evenly and ALLOW IT TO COOL DOWN COMPLETELY.
To prepare the dressing add lemon juice, olive oil, maple syrup, ground cumin, ground black pepper and salt to a small bowl. Mix thoroughly and set it aside.
By now the quinoa would have cooled down, if not, wait till it completely cools down. Add the red bell pepper, Cherry/Grape tomatoes, red onion, green onion, cilantro and cooked black beans to the bowl with quinoa. Stir the dressing again to make sure everything is well incorporated. Then add the dressing to the quinoa/veggies and mix well.
You can eat it right away, BUT I HIGHLY RECOMMEND TO CHILL THE SALAD IN THE REFRIDGERATOR FOR A COUPLE HOURS BEFORE SERVING. This will allow the flavours to blend and it tastes so good cold. This salad is good just on it's own, but you can top with avocado just before serving

???? Thoroughly wash the quinoa, this will get rid of any impurities/gunk/bitterness and will give a cleaner taste to the quinoa
???? Thoroughly rinse the cooked black beans in a strainer and set it aside to drain any excess water. We do not want any soggy beans
???? Every stove is different so regulate the heat as required. If at any point you notice the pan is getting over heated, reduce the heat
???? Regarding cooking the quinoa, do not let the quinoa get mushy. Cook until the quinoa is cooked but still holds it's shape.

Spice mix:
* 1 tablespoon onion powder
* 1 tablespoon garlic powder
* 2 teaspoon salt
* 1tablespoon paprika
* 1 teaspoon cayenne pepper/chili pepper
Meats
* 2 chicken breasts (season with 1 teaspoon spice mix)
* ½ pounds shrimp (season with 1 teaspoon spice mix)
* 4 medium hot dogs or sausages(I used chicken hotdogs)
Veggies
* 1 small onions
* 3 garlic cloves
* 4 tomatoes
* 1 hot chili pepper
* 1 small red bell pepper
* 110g tomato paste
* 5 spring onions
* 3 ½ cup raw rice (long grain)
* 2 cups chicken stock
* 2 cups water
* 1 teaspoon salt
* ½ teaspoon thyme
* 1 tablespoon spice mix
* 1 chicken seasoning cube

Ingredients
4-5 potatoes, peeled and cubed
28 ounces pasta sauce
For the Meatloaf:
2 pounds ground beef
1 onion
1 bunch fresh parsley leaves
3 garlic cloves
1 and 1/2 cups (115g) unseasoned Panko breadcrumbs
1 cup milk
1/2 cup shredded parmesan cheese
2 eggs, slightly beaten
1 teaspoon dried oregano
2 teaspoons salt
1/2 teaspoon crushed black pepper
1/2 teaspoon crushed red pepper flakes
The Filling:
8 oz feta cheese
1 cup shredded mozzarella cheese
12 oz roasted red peppers (about 2 peppers) chopped or Harissa sauce
Optional Filling Ingredients:
Pitted Kalamata olives, chopped
sautéed spinach
sautéed mushrooms
Instructions
Preheat the oven to 350 °F, 180 °C.
Prepare the meatloaf:
Place the ground beef in a large mixing bowl.
Finely chop the garlic, onion, and parsley in a food processor. Add to the bowl with the meat along with all of the remaining ingredients and mix together.
Place a 12 by 16-inch parchment paper on your work surface. Spread the meatloaf mixture onto the parhment paper as evenly as you can.
Add the crumbled feta to the middle of the meatloaf along with the roasted peppers and the mozzarella cheese.
Use the parchment paper to help you roll the meatloaf and transfer it to a baking pan.
Carefully remove the paper and discard it.
Place the potatoes in a bowl and drizzle a quarter cup of olive oil over them. Season with salt, pepper and a teaspoon of dried oregano. Toss together and arrange them around the meatloaf.
Pour the pasta sauce over the tomatoes and over the top of the meatloaf.
Cover the pan with foil and bake on the center rack of the preheated oven for 40 minutes. Remove the foil and bake an additional 25 minutes or until the potatoes are fork-tender. The meatloaf is ready once the internal temperature reaches
160 °F, 71 °C.
Allow it to rest for 15 minutes and serve with salad and toasted bread.
