How To make Bean Soup (Santa Maria)
2 c Dried beans, soaked
1 Onion, chopped
2 Carrots, peeled & sliced
1 Celery stick, sliced
2 Tomatoes, chopped
1/2 c Olive oil
Bay leaves 1 ts Salt
1 pn Pepper
1 ts Cumin
3 pt Stock
Cook the soaked beans in fresh water for 10 minutes. Drain. In a soup pot, heat the oil & gently fry the onion. Add the rest of the vegetables & the seasonings. Stir well & add the beans. Ensure that all the vegetables are covered with oil & pour in the stock. Allow to simmer till the beans are cooked & the vegetables are tender. Jack Santa Maria, "Greek Vegetarian Cookery"

Today we will be cooking Charro Beans. These are great for gatherings, potlucks and heck, bust some out for Thanksgiving! I am sure they will be loved by everyone. Feel free to experiment with these charro beans and add in your own ingredients to the base layer. These Charro beans are super easy to make. The most time consuming part is probably the beans themselves.
► INGREDIENTS
Pot of beans (cooked)
- 2 cups of dried beans (Pinto or Peruvian
- 2 quarts of water
- 1/4 onion
- 1-5 cloves of garlic
- Salt (keep it very light for this recipe)
Charro Beans Base Layer
- Chopped 1/4 Onion
- 2 serrano peppers( or jalapeños)
- 10 strips of bacon, chopped
- chorizo
- 3 beef hot dogs
- optional: cilantro, tomatoes, chicharon, ham, pulled pork.
Once your charro beans base layer is cooked. Mix it in your pot of beans!
Serve in bowl, add some fresh cilantro or additional spice like pickled jalapeños.

Ingredients you will need:
1/2 or 3/4 of diced gammon hock with bones
carrots
parsnips
swede
2-3 types of dried beans
parsley
celeriac leaves
onion
garlic
bay leaves
salt & pepper
sweet paprika
flour
vegetable oil
