Taiwanese Oyster Mee Sua Recipe - 台湾蚵仔面线
Ingredients below ⬇️ The Taiwanese came up with the idea of adding oysters and braised pig intestines to this simple dish which made it a wildly popular mee sua recipe.
Mee sua is made of wheat flour. During the cooking process, starch is released into the soup which acts as a thickening agent. Our version of the stock is made with bonito flakes, dried cuttle fish and chicken stock, which makes it so tasty!
The smooth texture, coupled with juicy oysters is so simple yet irresistible. Best way to enjoy this dish is to send it slurping into your mouth! For those who love vinegar, this goes really well with black vinegar!

300g oyster meat fresh / frozen
130g mee sua (chinese wheat flour noodle)
2 tbsp sweet potato starch
⅓ cup fried shallots
1 tsp dark soy sauce
4 tbsp cornstarch mix with ½ cup water (adjust to desired consistency)
Fresh coriander
Black vinegar
Stock:
1 dried cuttlefish
1.5 L water
1.5 L chicken stock
20g sliced ginger
8 cloves garlic skin on
50g dried shaved bonito
1 tbsp ground white peppercorn coriander mixture
1 tbsp rice wine
1 tbsp light soy sauce

Ingredients:
A Pack of Jack & King's Frozen on Shell & Gutted Abalone (6 pieces)
Pork Belly 8.8 oz (or 250g)
Ginger 0.8 oz (or 20g)
Green onion 2 pcs
Soysause 3 sps
Suger half sps
Method:
Step 1: Cut the abalone, scoring it with a knife as shown, and set aside.
Step 2: Cut the pork into small cubes and fry it with ginger and onions.
Step 3: Add the seasonings and water and cook for 45 minutes.
Step 4: Add the prepared abalone and stir fry everything together for 5 minutes.
Step 5: Remove everything to a bowl, sprinkle with chopped green onions, and serve over rice.
These premium abalones are delicious in the flavorful sauce.
