4 pounds spareribs 1/4 cup ketchup 1 teaspoon dry mustard 1/4 cup dark rum 2 cloves garlic
crushed 1 cup brown sugar :
packed 1/4 cup soy sauce 1/2 cup chili sauce 1/4 cup worcestershire sauce dash pepper Wrap ribs in double thickness of foil and bak for 1 1/2 hours at 350 . Unwrap and drain drippings. Combine all ingredients and pour over ribs. Marinate at room temperature for 1 hour. Bake at 350 for 30 min., basting with sauce, or grill 30 min., turning and basting.

Spare ribs cola and Rum flavoured
Dry Rub ingredients: - 2 ½ cup brown sugar - ½ cup coarse salt - 1 cup paprika powder - 6 tablespoons dried parsley - 6 tablespoons dried basil - 6 tablespoons dried oregano - 6 tablespoons dried thyme - 6 tablespoons dried onion powder - 6 tablespoons dried parsley - 3 tablespoons coarse ground pepper - 2 teaspoon allspice - 2 teaspoon cinnamon
Sauce ingredients: (makes 4 cups) - 2 cup coca cola - 1 cup dark rum - 2 cup ketchup - 1 cup Worcestershire sauce - 2 teaspoons liquid smoke - 2 teaspoons onion flakes - 2 teaspoons garlic flakes - 1 teaspoon fresh ground pepper - juice from 1 lime
How To: - Make the sauce, by mixing the ingredients and boiling it down to a syrup - Bottle the sauce and let it cool down - Prepare the dry rub by mixing the ingredients - Take of the membrane from the back of the ribs - Rub the spareribs with olive oil - Rub the dry rub on the spare ribs - Set them in your smoker or barbecue at 110 degrees Celsius or 225 degrees Fahrenheit. - Smoke the ribs with 2 or 3 chuncks of oak or hickory - After three hours place the ribs on foil with some barbecue sauce. - Smoke the ribs for another 2 hours at the same temperature. - Unwrap the ribs after two hours and place them back on the barbecue or smoker - Brush on some barbecue sauce -Let the barbecue sauce caramelize a little in an hours time, at the same temperature.

4'th of July we celebrate our Independence Day and no better way to celebrate then to kick back and throw some meat on the BBQ. In this video i share with you a new recipe I found on youtube for smoked ribs and a home made bbq sauce using Sailor Jerry spiced rum. I also try for the first time the Whiskey Hollow baked beans. Just a chill relaxing day outside the machine shop having fun on the smoker.

A How to video recipe- This weekend I made Caribbean style ribs with a mango rum BBQ sauce. It had a nice kick to it. I paired it with a smoked cocktail.

Smoked Ice. I place some ice in a bowl and put it on the smoker for about 30-40 minutes then removed it to cool off. I then poured the water into ice trays and re-freezed for 8 hours.

Ingredients 250ml ketchup 2 tbsp Worcestershire Sauce 1 tbsp honey 1 tbsp smoked paprika 1 tbsp of white wine vinegar 1 tsp salt 12 tsp pepper 12 tsp chilli flakes 3 garlic cloves 2 onions Few pork ribs or pork bones 50ml jamaican rum Oil for frying
Maple - Rum Ribs

INGREDIENTS:
0.57 kg ( approx. 1 & 1/4 lb) Side ribs with the silverskin removed from the underside*
2 tbsps maple syrup
Seasoning mix: 1 1/2 tsp Chili powder
1 tsp paprika
1/2 tsp cumin
1 tsp Ginger powder
1 tsp onion powder
Steak seasoning to taste (you may use bbq spice, salt or meat Seasoning if you prefer)
Glaze/Sauce:
2 cloves garlic, finely minced
1/4 cup apple juice
1/4 cup Jamaican Appleton Estate Rum
3 tbsps ketchup
2 tsps honey mustard
1/4 tsp cinnamon powder
1/4 tsp ginger powder
2 tsps apple cider vinegar
3 tsps Worsectershire sauce
Slurry (1 tbsp cornstarch mixed with 1 tbsp apple juice) add slurry as needed

*Sometimes your butcher will remove that thin membrane for you if you ask. The ribs will be cooked slow and long so if there's any silverskin left on there the slow cook will help with that so don't worry too much ???? Here's a video where I show how to remove the silverskin if you want to
