Making and Canning Fresh Chunky Salsa - Complete Walkthrough
In this video I make 6 quarts of fresh salsa and preserve it in jars. We'll go through the entire process, from preparing the ingredients, cooking, and canning.

Here's the basic recipe:
20-25 roma tomatoes (skinned and chopped)
3-4 large Spanish onions (chopped)
3-4 large green peppers (chopped)
2 poblano peppers (chopped)
3 jalapeno peppers (chopped)
4-5 cloves garlic (finely chopped)
2-3 tablespoons fresh cilantro (finely chopped)
1 cup white vinegar
2 tablespoons salt (optional)
Combine all ingredients in large pot. Heat to boiling, then reduce to simmer for 20-30 minutes.
Sterilize jars and lids. Add 1/4 teaspoon citric acid to each quart jar (1/8 teaspoon for pint). Fill jars with salsa, de-bubble, and wipe jar rims. Put lids and rings on jar, and place into hot water bath canner. Fill canner with enough water to cover the jars completely. Heat water to boiling. At this point, process for 20 minutes (quarts) or 15 minutes (pints). After processing, remove jars from canner and place on counter. Leave undisturbed for a day. Refrigerate jars after opening.
Makes about 6 quarts.

Due to its density and the ratio of low-acid ingredients (onion, peppers), the only official recommendation for canning salsa is in pint jars or smaller. Though through the years I’ve written several recipes for this iconic, ubiquitous salsa, I’m doing it again—but with a twist. I want you to ask yourself, What version of this salsa do I like?
You see, the ingredients are basically set in stone, but the proportions are not.
The tomatoes add soft sweetness, the onion offers a fresh crunch, and, of course, the cilantro and green chile add herbiness and spice. This salsa is typically seasoned with a little lime and salt. So, if you’re in the mood for a salsa that’s really spicy, you’ll want to add more chile than your neighbor might. I’m a cilantro freak, so I’ll likely be putting in more than you. If I’m weighing everything, I like 4 parts tomato to 1 part onion, but that might not be to your taste.
I know people who want more and other who want less. You’re getting the idea, I think. I’m encouraging you to chop up the tomatoes, then add the remaining three ingredients a little at a time—tasting as you go—to determine what tastes really good to you. Same goes for lime and salt.
In the Yucatán, they make this salsa (called Xnipec) with red onion and habanero chile (I’ll advise you to start with half a chile and work up from there). There they use sour orange juice, which is about as sour as lemon, but with overtones of orange; to achieve a similar flavor, you can add a splash of orange to the lime. Also, I’ve seen versions made with some finely chopped radish, which adds a unique crunch that’s beautiful.

How to Make Salsa | Easy Homemade Salsa Recipe
Today, I'll show you how to make mild salsa at home. This pico de gallo is an awesome healthy snack idea. I used my large Fablunch container to store the salsa:

In my opinion, this is the best recipe for salsa. I love the fresh taste of this homemade salsa and the fact that it takes less than 5 minutes to make.
It's also very versatile. I use this salsa as a side for my lunch and dinner. I also love serving it with scrambled tofu for breakfast and of course as a heathy dip with crackers. Personally, I prefer the salsa when it's finely diced rather than processed in a food processor. Most of the time if I process it, I eat the salsa as a cold soup like I showed you in the video.
